The SunFlower Restaurant in Fall Church is excellent and is only a short drive from Arlington.

assuming you'll be near a bus or subway stop you'll have easy access to the majority of places on the site I linked to. Once you have a better idea of where you'll be staying I can give much better recommendations.

Lost dog cafe has vegan pizza and is in Arlington. Arlington spans a sizeable area though so if you're on foot let us know where you're staying and we can help more.

I was just in Falls Church yesterday and I feel like maybe Sunflower isn't too far from the metro... (correct me if I am wrong).
There are also a couple zpizzas in Arlington and Alexandria (they deliver and have buy one, get one free larges on Tuesdays).
There's Bus Boys and Aladdin's in Shirlington.
ETA- There is also Pizzeria Paradiso and Harmony in Georgetown (which is easy if you end up in Rosslyn).

I hate to recommend salad but there is a sweetgreen at 4075 Wilson Boulevard and sweetgreen is awesome. It's basically chipotle with salad and they have awesome baked falafel and tofu. It's a little pricy for veggies at about $7-9 but a ton of food.
