O'Hare or Midway? Both are pretty rough. O'Hare is enormous, so it depends which terminal. There is the ubiquitous Auntie Anne's pretzels, there's a DIY burrito place, or the CIBO express convenience shop in terminal 2 has some Soul Veg to-go items (like wraps, which are really good.) If you can find it, it's your best call.

Last time the boy and I flew out of O'Hare, we grabbed some Soul Veg from that CIBO, and went to the Goose Island pub-thing for drinksies. GI is a local brewery with some tasty beverages (all vegan, according to Barnivore). They let us eat our stuff there, as long as we got some beers. We were drunk on the plane. It was awesome.
Wait. I flew Alaska, which is in Terminal 3. Maybe there's more than one CIBO with Soul Veg. Hmmmm. O'Hare's terrible, terrible website doesn't list any businesses inside. Jerks.
I haven't been to Midway in a decade.

If it's Midway, I think the best you're going to get is a Potbelly's (are any of their breads vegan?) and I think the last time I flew out of there I was able to find some organic cereal (one of the GF ones, like Gorilla Munch?) in one of the stores that made sandwiches to order (but I couldn't find any soy milk! Awesome!). My flight was delayed and I was hungry, but I couldn't figure out what was vegan and what wasn't on my blackberry (and Midway doesn't have free wi-fi), so I stuck with what I knew, which was cereal.
I usually bring my own snacks.
I hope it's O'Hare, because Soul Veg food sounds much more promising and tasty.

I forget which terminal I was in at O'Hare (United), but the options were terrible. They had a Jamba Juice and I ended up eating a Clif bar as a meal.

When I passed through O'Hare all I could find was bags of cashews. Pretty bleak.
