So, I decided that I really want to put together a cookzine to sell at the Vancouver VegFest in June and to donate the proceeds to an animal sanctuary in BC. Some awesome folks in the Vancouver thread are contributing art/skills/recipes, and I've been experimenting with veganizing Canadian dishes ever since being inspired by American Vegan Kitchen (thanks Tamasin!) I know a PPKer made a Canadiana cookzine awhile ago, which is awesome, and I've been wanting to make my own zine forever.
Anyway, if you have an amazing vegan Canadian recipe and would like to contribute, that would be awesome! Otherwise, I am looking for some help brainstorming Canadian dishes I'd like to veganize. I've made a pretty epic list of traditional Canadian foods as follows, and obviously won't use even close to everything (and some are a lot more interesting than others), but if you have some awesome ideas about dishes I must include, please let me know! The starred ones are for stuff I've finished or am in the works of writing a recipe for. I'm kind of focussing on Pacific North West and the prairies because a) that's where I'm from and know, and b) it's going to be sold in Vancouver, but I would welcome awesome Central Canada/the North/East Coast recipes too!
Breakfast: *Pumpkin millet muffins Montreal-Style Bagels (anyone got a recipe?) *Beer Bread *Logger’s Breakfast Pancakes and Maple Syrup Baked Beans on Toast Toaster Tarts *Hempseed and Wheat Berry Porridge
Givens: Kraft Dinner Poutine (Both Montreal and Western-Canada style)
Soups: *Three Sisters Soup Pea Soup *Maple Ginger Vegetable Soup with Wheatberries Mushroom Beer Soup Les Habitant Yellow Pea Soup *Chanterelle Soup Irish Stew Maritimes Chowder *Saskatchewan Borsht
Basics: *Ketchup *Blackfoot Fry Bread *Bannock *Blackberry BBQ Sauce Poutine Gravy
Entrees: Tortiere Haddock and Chips *Vegetarian Indian Tacos (My Blackfoot friend is providing this recipe) Acadian Rappie Pie BBQ Maple Tempeh Yorkshire Pudding *Quebecois Pizza Roast Seitan Turkey with Mushroom Gravy *Blueberry Jalapeno Tofu Yam Casserole *Whisky Marinated Tempeh Quebecois Shepherd’s pie
Sandwiches and Salads: Alberta Wheat Berry Salad Wild Rice and Yam Salad *Cowichan Valley Cider vinegraitte *Kelowna Ice Wine Vinegraitte *Pacific Northwest Salad with Hazelnuts and Beets Candied Salmon Salad *Salt Spring Rolls Smoked Meat Sandwiches Prairie Grain Veggie Burgers
Oddities: Ketchup and Dill Pickle Chips *Smoked Chickpea "Salmon" *Seitan Garlic Sausage Pioneer Pierogies Fried Eggplant Canadian Bacon *Sun-dried Rocky Mountain Berries *Dulse Tofu Fingers *Pemmican Vancouver Sushi Newfoundland Toutins *JapaDogs *Hockey Night in Canada Nachos *Don Cherry Dog Treats
Sides:
*Roasted Fiddleheads Cranberry Sauce Baked cream corn and peas *Roasted Maple Roots Winter Greens *Sauteed Sea Asparagus *Taber Sweet Corn *Roasted Turnips *Crispy Nova Scotia Dulse

Elephant Ears/Beaver Tails Moosehunters (molasses cookies) Coffee Crisp (if anyone can veganize a Coffee Crisp bar I will sell you my soul) Tofino Bars (hopefully I can get Green Cuisine to agree to contribute the recipe) Victoria Afternoon Tea Crumpets with Clotted Cream *Hockey Puck Fudge
Beverages:
*Ginger Beer *Spruce Beer * Vegan Caesars (invented in Calgary!) *Bootleg Whiskey Sour

(I'll send you my bannock recipe as soon as I can get it together!) Awesome!!! I could certainly use your design talents too down the line. lobsteriffic, thanks! I want to do a PDF version too for online sales. And QueenV's tart recipe is in her new (coming out very soon!) book Quick And Easy Vegan Bake Sale. http://www.amazon.com/Quick-Easy-Vegan- ... 1615190260 She has awesomely request permission to allow a couple of recipes be reprinted in the zine.

Oohh, I would like a copy of whatever zine this turns out to be, too! I am from the prairies, as well, so a lot of your EPIC list looks really familiar,O and much yummier vegan (Habitant soup-I miss that! I used to do a semi-homemade recipe from that, but alas even my add-ins were unvegan....that could be another project altogether!) Off the top of my head, though, I would say one Canadian late-summer food that should be considered to make the list would be zucchini, any way, shape or form. Also something with lentils would be good, for the prairie's sake.

I can't believed I ignored lentils! My boyfriend makes an amazing red lentil "cheese" sauce that might reflect Canada enough given our national obsession with cheese sauces and plentiful lentils. If you want to veganize your Habitant soup recipe, that would be an AWESOME contribution!

Wow I didn't even know about all these canadian foods. I'll definitely want a copy so I can make them for my Canadian husband when he gets homesick.
I don't know if this is apprpriate for your zine, but he recently introduced me to Red River Cereal. We had to order it online because you can't buy it in the states. It is sooooo good!! I eat it every weekend now. I like to melt in 2 tablspoons of chocolate chips. Yum.

Wow! I want! Such a great idea. You have so many different recipes - I'm originally from the States, so I never would have thought of most of these!

Woah, that's one mega list. I might be able to help with a couple of the Newfie things. Some other suggestions I have are, fish n brews, jam jams, Newfoundland tea biscuits, molasses bread, partridgeberry pie, St. John's stout stew, snowballs, figgy duff, cod au gratin, some kind of rum cake that utilizes Screech. Wow, now that I think about it I wish there was a vegan Newfoundland cookzine

Sure! I think I can come up with a few veganized versions of toutins, jam jams, Newfoundland tea biscuits, molasses bread and whatever else I have time for. I don't think I'll be able to do partridgeberry pie as I don't think I can get them in Alberta. I'm not familiar with veganizing fish recipes so I'm not sure if I'll be able to do those either but if anyone has any suggestions that would help. I'll double check to see if Screech is vegan, I haven't had it in years so I never bothered to check.
