I'm preparing a business plan for a vegan bakery, and I need stats on veganism that could convince bankers and grant-givers that this is a growing market. Where can I find these?

Bonus points for Canadian ones, but if there be only US ones, well, that will have to do!

I was interested in this because it does seem from my anecdotal experience that veganism is growing. So these results are just from a quick search.

The International Dairy Deli Bakery Association put out their annual report, this article summarizes: "More consumers are altering their diets to include more plant-based foods for reasons of health and environmental concern. More are also becoming flexitarians, who regularly eat meatless meals. There’s growth, too, in veganism, a diet that excludes animal products.
