I'm gonna barbeque some tofu and veggies, stuff 'em in a pita with a mayo dressing. Mmm.

I think it'll be bbq tempeh with asparagus (lightly sauteed, salt + pepper, hollandaise if I can google up a good recipe).
OR, if the bag of bean sprouts in my fridge is still ok (doubtful), I might try that Pacific vegetable pho broth I've had forever, with tofu, rice noodles, sprouts, cilantro, and sriracha.

Pesto lasagna. Homemade basil pesto, marinara, spinach-tofu ricotta and homemade "mozarella" sauce. So creamy, so good.

Grilled sandwiches with Thai-inspired pesto, curry tofu, red pepper (if I remember to pick one up!), and spinach. Lots of sliced veggies on the side.

Smokey mixed greens (kale, turnip greens, and kohlrabi greens) with baby leaks, garlic scapes, and basil. Leftover red bean and grilled corn.

It's awesome! But also kind of overwhelming. And it's weird because in the past, it's produced maaaybe 10 pieces of fruit a year. This year it has exploded and we can't keep up. It's a good problem to have, for sure.

Sick of forking stir fry. considering I was in love with it a few weeks back - big turn around... Ugh, I cant' eat that again for a while, had to open the door after I ate it to get rid of the smell.

I tried to make onion bhajis, but my bhajis never turn out right so they were a strange (but not unpleasant) sort of onion and chickpea flour fritter. Then later on I had mashed potato with BBQ sauce.

Leftover fantastic tofu and cashews in red chili sauce (my partner's creation) added to rice noodles, kale, and sugar snap peas. Deliciousness!

Pizza night! Just a simple combo style pizza with Tofurky pepperoni (which is actually pretty tasty), daiya, shrooms, shallots, olives, and bell pepper.

last night ended up being late night nachos with nacho teese (been in my fridge for what seems like years), pickled jalapenos, black beans and mashed avocado.
tonight's gonna be tester beef & asparagus with fresh herbs, except I'm using the broccolini.

I've been super-busy and not cooking too much lately, so wve been having lots of salads for dinner (which is fine, obviously!). But I have a houseguest arriving this evening, so I figured it would be nice to put on the proverbial dog a little, while still keeping it simple. So I'm making the eggplant lentil chili and soft broccoli polenta from AFR, along with some beautiful grilled asparagus.
