I tried making Veganomicon's wheat-free choc chip cookies tonight and they tasted GREAT but they all flattened out super thin. I followed the recipe exactly and am not sure what happened. Any advice? Should I add more oat flour?
And help would be WONDERFUL!!! :-)

sometimes it helps to let cookie dough rest for a half hour or so in the fridge before making cookies. it helps the grains to absorb more of the liquid. that could possibly have been it. do you use liquid measuring cups and dry measuring cups? it sounds like maybe there was too much liquid? i dunno. i think those cookies come out kinda flat anyway, so maybe they're how they're supposed to be?

Thank you, the fridge is a good idea...I put them in and will try again tomorrow :-) like I said, they tasted really good, just came out super thin! Maybe more flour next time too.

What do they have for thickener? If they don't have cornstarch then a tablespoon of that might help.
I agree with the fridge idea, though, especially with the oat flour which should absorb more water as you let it sit.

Let them sit in the fridge after forming them. :) It helps a lot. I usually let them sit in there for 15-30 minutes while I preheat the oven.
