Spagetti with sauce that has extra veggies & hemp protien powder in it. I also brought organic grapes, an orange, sugar snap peas, baby carrots, pretzels and edamame hummus and I'm actually worried this may not be enough food to last me the entire day. Eeeks!

Stir fried veggies with a little bit of peanut sauce and quinoa. Made it early last week, it's time to kill it. (especially since I have TONS of food ideas for this week that I need to start on!!) And salad for snacks.

My lunch was awesome today, because it was leftover brunch from yesterday. I had two mini caramelized onion quiches with bell pepper and mushrooms in phyllo crusts and a square of potato spinach square and some fruit salad and a chocolate chip cookie. The quiche and potato thing are in Vegan Brunch. They are yummy!

I brought a healthy lunch! Same one every day this week (it's easiest to pack 4-5 at once). Salad: arugula, beets, olives, chickpeas, celery, carrots, tomato, sprouty-bean thingies, croutons Side of fruit: cherries and blueberries So much better and cheaper than eating a burrito out every day like I have been for the last month. Yay salads!

Coleslaw, old stir fried veggies with peanut sauce and dry-fried tofu (I made so much and totally underestimated how long it would feed me for), small salad with falafel. Yay for lots of veggies!

Pearl couscous with bell peppers, onions, and field roast mixed in (leftovers from two nights ago, all mixed together). Cherries.

I'm still on maternity leave, but I had hummus, carrots, and a popsicle. Seriously a lot of hummus and carrots. I need to start packing lunches for when I return to work though. I usually went out to eat before, but now I won't have time.
mollyjade, I love pearled couscous! I only recently discovered it.

Quinoa, chickpea, grated carrot, red onion and tomato salad, with a tarragon-y (shop bought) dressing. And some seeds to sprinkle on top.

I'm desperately reading this thread so I can stop just having the vegan items at my work (olives, bread, hummus, tapenade, pickled beets) every single day at work. That's a lot of salt and olive oil. Not that I'm against those things, but it's started to mess with my stomach in the afternoons.

Leftovers from last week! Finally finishing off something I made last tuesday. Jerk spice marinated tempeh with collard greens and fried sweet potatoes with some of the marinade mixed in. So delicious. Also, another small salad with falafel for snack and coleslaw for snack. (kohlrabi coleslaw)
