Last night my partner sliced and fried some of the Italian sausages from Isa's blog with onions, garlic, patypan squash, orange bell pepper, corn, an habanero, and a jalapeño and topped it all with Mexican hot sauce. It was good, but very hot. Tonight we are going to tame the heat of the leftovers by adding some spinach and maybe some other stuff.

I am really excited about dinner tonight. It is in the oven right now.
It's roasted veggie calzones and strawberry rhubarb crisp for dessert
The pesto for the calzones is veganomicon pesto with herbs fresh from the garden. The rhubarb was also fresh from the garden. I want to eat it all right now.
I took pictures but they were too big and I was too lazy to resize. I may resize and add them later. It's all pretty.

I made the gluten free version of Isa's new recipe. Actually, that will be dinner for many days to come, since I doubled it.

I had a really late lunch which was nutritious and boring, but for dinner, because I'm not really hungry but still wanted to eat something, I have Italian chocolate-hazelnut spread on freshly made bread, sprinkled with Dutch dark chocolate hagelslag. It's really good!

Parsley & basil pesto marinated baked tofu, roasted cauliflower and mashed potatoes. Maybe roasted garlic in there somewhere.

Quinoa, white bean & kale stew from AFR + homemade bread for dipping! Only, I replaced the white beans with kidney beans because that's what I had on hand and... why not?

Baked tofu, roasted zucchini and onions, and brown rice. I'm also roasting 1.5 pounds of garlic cloves, so I'll eat some of those, too.

Was going to have mac'n'cheese, but we made tons of pizza and breakfast pockets by hand, so we're kind of tired. Quesadillas it is! Cheddar Daiya quesadilla for me, with spinach and mushrooms. Maybe there will also be a bit of Italian Tofurkey sausage sliced in there.

This French co-op student at work craves "American food like hamburgers and fries", so I'm taking her to a gourmet burger joint where I have three vegan burger options to choose from. And delicious fries/local brews. It's my Friday!

Oh man, Vijita, I miss Pink Bicycle so much! I always, always, always get the Moroccan chick pea burger.
My dinner is a bowl of roasted goodness: tofu, thinly sliced potatoes, broccoli and onions topped with Esme's sauce and ketchup for good measure.

roasted portabelos (Veganomicon) roasted red and yellow peppers stuffed with veggie fried rice
It was good. I really wanted to make sushi but lost my mat and my supermarket didn't have one (they also didn't have the baking supplies I wanted... I was annoyed). This was easy and delish though.
