Im probably super late but when i went on the Urban Vegan blog today she had a post and a couple of recipes using garlic scapes and it reminded me of this thread.

I don't think anyone has mentioned it, but I thought I learned about it from the PPK. Maybe on the old boards or someone's blog? Anyway, my new favorite thing is garlic scape butter. You just mince a garlic scape and stir it into some earth balance with a pinch of red pepper flakes. It's heavenly on a baked potato.

I just got these in my csa box and have never tried them before, but I can't wait! I love garlic so I have an odd feeling these are going to be delicious. Seeing as it's Canada Day tomorrow, joyfulgirl's butter mentioned above sounds like it would be fantastic on grilled corn!!!

Totally on the easy and less glamorous side, but I roasted broccoli with minced garlic scapes last night along with pan-fried tofu with garlic scapes. Great stuff.

And since I think I mentioned earlier (or in another thread? or to someone? blah) I like to sub them for green onions, I'm going to use them in a Kung Pao dish soon.

I made garlic scape tempura the other day and served it with a soy-sweet chili dipping sauce. It was amazing. Thanks to this thread for the inspiration.

I've heard that you can prepare these pretty much the same as asparagus (no filter) in a lot of recipes, but I hate asparagus so I don't know what that means.

Reviving this thread because I have a bunch of garlic scapes I need to use- I have a bag full (not sure how many exactly, and I'm at work now), is it ok to throw them all into a pesto or will that be way too strong? I haven't really seen this addressed by googling. I'll probably add in white beans, cashews, nooch, which will temper the flavor somewhat.

Quarantined, it might be a bit strong, but it might not. Personally, I usually sautee in a stir fry with peanut sauce and some other veggies and tofu. The first time it was mostly garlic scapes and a little too much, the second, too many other veggies. Sigh. Just means I have to get more to get it right! or try other ideas from this thread...

thanks! I guess I'll dump everything into the pesto, then taste it to see how it is. I was planning on cooking a whole package of pasta so will determine whether to mix all of the pesto in, or just part of it if it's too strong.

I think that garlic scape butter might have been me! I'm late in posting what I did with them this year, but here it is. This past weekend, I also pickled some (both refrigerator and hot water bath). They are amazing. Oh, and if you don't get a ton of them, I suggest a scape gravy!

I made pesto with scapes last week. It was made with scapes, olive oil, toasted pine nuts and almonds, and salt. I ate it all.

I ended up using my whole bag which was probably too many- maybe 10 scapes in all, or more. I added a ton of other stuff to so it made a huge amount, so I used about a fourth of it for pasta then froze the rest, I'll try it on pizza next.

It's great on pizza! And stirred into soups, mixed with mayo for a sandwich spread, a dollop in a savory muffin recipe... such wonderful stuff!

I nearly cried with happiness when I saw this thread! I first had scapes when I was wwoof-ing in America last year and can't find them in the UK!! I don't have the space to grow my own garlic anywhere otherwise I would. I've mentioned scapes to people here and hardley anyone's heard of them! Does anyone on here from the UK have experience of finding them? I've got a couple of really good farmers markets around where I live, and a Whole Foods, and some very good grocery stores and NOWHERE has them :( sad times.
The main way we had them in the states was steamed and with salads and goats cheese, or as pesto on pizzas.

i chopped up the one that my garden produced and ate it raw on a salad. it definitely had a bite but i preferred it to the small portion i sauted with oil.

Ok, so I went to Whole Foods today and definitely found some. Pricey, and brought from the Isle of White apparently but they're scapes and I'm going on a pesto fest next week :)

I dig garlic scapes and use them often when they're in season. I first got into them grilled with lemon juice & olive oil, and also really like minced and roasted with vegetables. They add legit garlic flavor to stocks and soups. If you're like me and despise green onions and chives (unless cooked into things) you can easily sub garlic scapes.
