I just realized i'm not 100% sure when I bought my tub or how long it's been in the fridge. I feel like I should use the rest of it before too long.
I know you can use it as lube, moisturizer, and cooking oil (I assume it works like olive oil?) but what else? I'd really like to showcase the wonderful taste.

Popcorn! I use it a lot like olive oil when I cook w/ it. When it's solid you can use it in place of margarine for baking, but the texture is different, because it melts at a pretty high temp.

It's awesome to sauté veggies in for curries. Especially mushrooms. The smell is amazing.

Not really for the taste, but I use it for greasing baking pans.

I have never used it before but I am using it tonight to make Dreena's (Let Them Eat Vegan) Black Bean, Sweet Potato, Quinoa Croquettes. The coconut oil is used to sautee the veggies and then to fry the patties. I bet it will be delicious!

I get the unflavoured kind and use it to cook just about everything... stir frys, to grease baking pans, really, honestly everything. This is either really good for me or will kill me depending on who you ask.

Aside from the healthy benefits, it also smells great!

use it for the cooking oil in Indian food (especially for something like daal where you might fry something in oil at the end for seasoning and throw on top), or use it as you would shortening (biscuits, pie crust, etc).

I mostly use it for cooking curries and stir fry. I would like to use it for baking but I have a hard time getting over the mental block of it being expensive and I don't want to use it all at once, yet it still sits in my cupboard. Maybe I make something with it today since, like you, I've had it for a long time now.
