Tonight I had the fattest pizza ever, made from 1 3/4 packets of pizza dough mix. Topped with homemade pizza sauce, red/green peppers, onion, sweetcorn, sliced mushrooms, jalapenos, tomato and a drizzle of EVOO < (Today it struck me what this stood for, AHA). And I ate it all. I swear I must be the only person who can demolish a whole pizza which is "supposed to serve" like 3/4 people and not even struggle.

Steamed kale and roasted cauliflower topped with the sunflower mac sauce from the PPK blog. I doctored it slightly because it came out runny last time (all my own mistakes) and it came out nice and thick and delicious. I can't wait to eat more tomorrow.

hardshell (gringo) tacos filled with ground-up smoky seitan from Vegan Diner cooked with taco spices, leftover yellow garlic rice and guasaca from Viva Vegan. Such a simple delicious dinner in this heat 'cause all I gotta do is brown the seitan woohoo. Hopefully I won't be too lazy to make a green salad on the side.

an "i'm all out of ideas" menu tonight.
bulgur and chickpea salad, pan-fried tofu with some kind of crazy fig balsamic tahini soy sauce agave glaze, and toasted sesame ginger and garlic green beans.

I had the saddest dinner ever. Toast with sliced tomato. And later a block of silken tofu blended with stevia, lemon juice, and vanilla extract to make "pudding" (gross as it sounds, it wasn't terrible). Sooooo sad.

We had sesame kale, roasted veggies, and a weird pineapple tofu that didn't live up to my expectations. Tonight--a curry of some sort. I have heaps of veggies to use up.

Not at all, I eat pizzas myself a few times a week, but since they don't have any cheese its not really more unhealthy than eating a bunch of sandwhich ingredients, or at least thats what I like to say. On my pizza yesterday I had chickpeas, tinned mushrooms, olives, capers, leftover kibbeh, and some avocado when it was done.

I had the Cauliflower Pesto Soup from AFR and it was amazing, as usual. This time instead of adding the last cup of broth at the end I added some plain unsweetened soymilk which made it extra creamy and rich. I also made a salad with the Green Goddess dressing from the same book, I am in love with that dressing!
