For the purpose of this post, I am talking about TASTE only.
I have only ever bought coconut oil from the Indian shop. I started using it lots of Keralan cooking where it worked well. Now though it appears in lots of other recipes and whenever I use it I can taste South Indian food. Is that just because it reminds me of it, or does health food shop coconut oil taste different? It's hugely more expensive, so I don't want to buy it only to find out it's just my taste buds and memory playing tricks on me.
I've only ever used one kind, and it is very strong! The smell is unmistakably coconut as soon as it hits the heat. Its sweet and nutty at the same time and works well savory or sweet.
