Was feeling lazy. Did a quick quinoa dish involving peanut butter and random veggies. Accidentally added significantly more cayenne pepper than intended (I was trying to add a small shake but ended up with approx 1-1 quinoa to pepper ratio). Still not hot enough.

Pasta with homemade sauce and roasted eggplant. Boyfriend is trying Field Roast sausage and Daiya. I hope this goes well.

A huge salad with avocado, edamame, CSA mixed greens, peppers, tomatoes, scallions, cuke, chipotle Parma, and a mustard-maple-hazelnut oil vinaigrette, along with a crumpet with EB and Parma. I haven't been eating very healthfully lately so this was well needed and satisfying.

Eggplant and chickpea curry from AFR. I had a bowl of it on it's own because I needed to eat some choccie dodgers this evening. It's going to be my dinner for the rest of the week but I will be good and have it with brown rice or else a boiled potato.

Soup was fantastic: zucchini, onions, celery (so much celery), carrots, potatoes, pumpkin puree stirred in, and the rosemary dumplings from here, only with italian seasoning instead.

Thanksgiving food! I posted my menu on the Thanksgiving thread if anyone's interested. Everything smells SO GOOD. Tofu/seitan roast is in the oven right now baking away and the stuffing is made, ready to go in when it's done. Pumpkin cheesecake and smoky pimento spread are chilling in the fridge. I think I might just be able to pull this off!

My Canadian Thanksgiving meal was a dosa with biryani (not my fave, but I was working late so my boyfriend ordered it) with rasam. It wasn't the best, but it was very well needed after a double shift. I inhaled the delicious dosa and coconut chutney but I wasn't much of a fan of the biryani/rasam. I thought for about five seconds about roasting Brussels sprouts with maple syrup/mustard for at least some semblance of a T-giving dish but I was just too tired.

rice & lentils with caramelized onions from vcon. i also roast some cubed butternut squash and throw it in there for extra deliciousness. it's been so cold in CO lately, and i'm sick, so all i want to eat is warm mush!

Leftover tofu scramble with some of the best oven roasted potatoes ever. Tossed the potatoes with potato starch before baking, as mentioned by the lovely kittee years ago in a blogpost I promptly bookmarked and forgot (d'oh!). I'm so glad I finally remembered! Topped with a splash of malt vinegar.
