My mum's signature vegan dish! Chana Masala. She has perfected it. I mean, it's far from authentic and the ginger is always not-finely-diced in an adorable way, but eating a vegan dish that your mum made is just too awesome.

Joanna's black eye pea and potato dill soup and a homestyle potato roll from VCON.

Tofurky sandwich, leftover lo mein, and a kale, onion, mushroom, broccoli, and pea saute.

Roasted potato and leek soup with some kale blended in for green goodness, with toast to dunk in.

Indain food from the freezer: some sort of dahl with eggplant and a pureed mustard green dish. All I had to do was heat them up and make the rice. It was even tastier than I remember it being when I made it.

Leftover pad thai from Thai takeout last night.

Biscuits and gravy, tofu scramble, coconut bacon, home fries and steamed kale.

Mac & Cheese! We made the cheesy sauce recipe from The Uncheese Cookbook with double the garlic & onion powder & extra nooch & we stirred in Daiya at the end. It was perfect!

Braised leeks and mushrooms in red wine from Vegan Eat World with mashed potatoes and a hot veg. This will be my first savory cooking attempt from Vegan Eat World.

Dinner ended up being ridiculously awesome- Jamaican beefless patties, veggie fried rice, and cabbage and onion.

Omni stuff with boiled potatoes for the boys, leftover cauliflower and mushroom pot pie with sauteed kale for me, and spinach salad with apples and walnuts for all of us.

Ethiopian food: yekik allecha, vegetable allecha, soy curl wat, salad, fresh injera. Stick a fork in me.

Tea and toast. Not a proper dinner, for sure, but I'm in the midst of an all-night cram session, so meh...

Leftover boiled potatoes, steamed white seitan from Viva Vegan, and a bastardised punk rock chickpea gravy. I think I'd be enjoying it more if I hadn't eaten a whole loaf of the seitan while waiting for the gravy... but I was SO HUNGRY.

I had a lovely Provencal stew with butter beans, artichokes, tomatoes, and tonnes of other veggies. It was a specially made for me entree at a no-vegan-options restaurant. And the stew was delicious. The chef (whom I spoke to because that same restaurant made my boyfriend and I an amazing special dish for a bridal party rehearsal dinner) was really stoked, and she experimented with a lot of different textures and stages of cooked versus raw, plus the beans were outstanding. And the portion size was insane. I now have at least two lunches leftover.

I'm going to try my hand at buss up shut. Not sure what curry will be going with it yet, probably some potato and chickpeas or mixed vegetable.

A veggie grinder (ever start craving something in class or at work really bad and you keep making it and eating it in your head? that was me) and some leftover fried rice I made yesterday. And because I'm still way in the mood for Jamaican food, the last two beefless patties are also on the menu.
