BTW, it's ok if there's a little tomato in it, just not a full on tomato sauce. I've been cooking for my dad since he's started chemo and he's a tad sensitive to the tomato sauce.

What about white chili? This is a random recipe that popped up pn the internet for an axample. I've never had any but the idea sounds good to me. Also, be careful with any hot spices, even pepper. During my chemo everything even remotely spicy or hurt my oesophagus and stomach for hours. Same with strongly acidic foods.

I think I bookmarked an interesting-looking recipe for white bean, sweet potato, and apple chili awhile back; I have to go out, but will search for it when I get back!

He's a spice wimp anyway, so I already adjust for that :) I like white chili. I'll give it a whirl.

The White Chili recipe in Fresh from the Vegan Slow Cooker is really good.
I'm also interested in the recipe for the Pumpkin-Lentil Chili!

Thanks so much for the kind words (and the link). I'm so sorry that you've had to deal with that. I realize I may be facing that soon, but we're doing everything we can to keep him strong for the chemo. He's been a champ. He's gone mostly vegan and will at least try everything I make him. He's even drinking his carrot juice and green smoothies. I do realize that I'm blessed to be doing this for and with him, but it's always good to hear the reminder! BTW, he actually uttered the word "excellent" to his first black bean burger. I almost fell out of my chair. Bonus: my mom is trying to support him so she eats most of it too.

Thanks so much for the kind words (and the link). I'm so sorry that you've had to deal with that. My dad is able to do most of his normal stuff for himself (at least for now) so I'm still working when I don't have to be off for doctor's appointments - and I'm not the only one that's able to take him to those. I take at least one evening or weekend afternoon a week to do something with friends. I had an online conversation with the gym trainer this morning and am planning on getting myself back in there tonight. And while I'm cooking for Dad, I actually end up eating better myself. There are still some improvements I need to make in taking down-time, but we're all learning the new routine. I'm heavily introverted so everybody in the family appreciates when I take the down-time and are working with me to make sure I do.
