What is your favorite Mac and Cheeze recipe? Why do you love it?

I love the sunflower Mac on the PPK blog. It's creamy, comforting, and cheesily bland. Sometimes I add Lima beans or Gardein. The sauce is my go to cheesy sauce now.

I also like the Leahey sauce mix.

It's a lot of work (I say as a very lazy person) and also not the sort of thing most of us can eat every day, buuuuuuuuut I absolutely love Isa's Mac'n'Shews. It reminds me of my mom's baked mac from a million years ago.

I think how much you like any mac recipe is going to depend on what kind of mac you liked pre-gan though. Were you a homemade baked mac person? A kraft from the box and no funny shapes person? A... Velveeta person?

If you were a Velveeta (or kraft "deluxe") person, you might try the mac recipe in Peas & Thank You that uses Daiya and some other stuff. Reminded me sooo hardcore of that stuff.

My favorite is the one from VegNews. I am not the biggest fan of nutritional yeast, and this recipe doesn't use it.

I really like the recipe from new farm. I'm trying the one from vegan diner tomorrow.

So many options! My go-to quick mac and cheese is Dragonfly's bulk uncheese mix from vegweb for the sauce (I always keep some mix handy in the fridge)--you can even cook the pasta in the microwave if need be.

For something a little fancier, I like this one: http://simplytink.blogspot.com/2010/11/ ... heeze.html -- I leave out the ume paste because I've never bought it. It is super creamy and has a smoky flavor. It works just fine to add sauce to individual pasta servings, although you may want to pop it in the microwave to heat up the sauce.

I just recently tried the Mac Daddy from Veganomicon and loved it. The sauce is relatively simple, but works really well, and the mashed tofu adds a nice texture.

Any of these are great with green veggies mixed in or on the side - kale, collard greens, broccoli, green peas, etc.

My favorite-favorite depends on my mood. Maybe someday I will find the perfect mac and cheese recipe, but for now I kinda like having options and will be trying a few from this thread too.

The recipe from Vegan Diner is my favorite - it's creamy, cheezy, and perfectly seasoned. When I don't have cashews on hand I make a lower fat version of the New Farm recipe, like this one here: http://getsconedpdx.com/2010/11/05/glut ... andcheese/

I'm still hung up on VegNews mac'n'cheese. I try others but always go back to that one.

If I'm veering a little more healthy and cheap, Isa's sunflower mac is awesome!

I like that the ingredients are pretty simple and always on hand. I use jarred roasted red pepper. I skip the tumeric. I up the milk in place of some of the water to make it more creamy and fatty like real mac & cheese.

I am making mine with cashew cheese and butternut squash puree, a bit of tahini . it is absolutely delicious but hen again I am biased towards butternut squash ! lol

I use the one from "Chloe's Kitchen" and it tastes just like the box mac&cheeze from Whole Foods. I didn't like it at first, but it has grown on me, just like most other vegan foods. It is fast and easy, so those things alone make it a family friendly meal. My young girls don't question that it is not real mac & cheese, although it does taste nutritional yeasty.

Kittee's Mac and Cheese is to die for! Both the Southern style and the Ethiopian version from Papa Tofu Loves Ethiopian Food. Smokey, creamy, and very cheesy her recipes seriously have every element I am looking for when I want mac and cheese. I could eat this everyday with a side of collards. Mmmmm. It's also a gluten free recipe for those interested in that although I've also made it using wheat flour and noodles and it turned out just as well. Also if you don't want to use cashews I've subbed unsweetened soymilk and it worked out great! Such an amazing versatile recipe I can't give it enough praise!
My runners up include the Vegnews mac which is a mixture of potatoes, carrots, onions, and cashews to make the cheesy sauce and Julie's mac from Vegan Diner for a Kraft like craving.

it's cashew and nooch cheese sauce and it's so yummy. i always do the baked version.

to be honest i havent really tried many mac n cheese recipes because i love this one so much

I love the Vegnews one (the one where you boil the potato, shallots and carrot to start) and I like Joanna's from YRR as well, but I usually make the Vegnews one because it doesn't call for vegan cheese.

Baked I like the Moosewood Version someone posted here years ago...Non-baked on a work night a easy childhood replacement. Non-dairy - non-sweetened milk, Daiya, macaroni pasta and pepper...It goes well with BBQ!

The VegNews one is my favorite, too, but City O'City's here is a close second.

I have started a new Pinterest board for all these different Mac and cheezes. (I finally caved because of the PPK's 100 favorites list, and am so glad I did). Thanks for the recipes! I've tried two of the ones mentioned, and was also wondering if anyone had tried Alicia's from "Vegan Comfort Food". I'm not sure if my food processor can handle macadamias, but it looks good, too.

I'm such a huge supporter of the Mac Daddy from Veganomicon. I LOVE mac 'n' shews and the sunflower mac, but Mac Daddy is so EASY and just as delicious. I can throw together a big ol' thing of Mac Daddy with ingredients I generally have on hand in my house. It comes together quickly, no soaking required, it's so freaking delicious, and it makes a giant platter, so I have lunches for a while. It pairs wonderfully with tomato soup, greens, salad, whatever you want to put on the side. Plus you can dress it up with add-ins of all kinds.

Mac Daddy has become one of my go-to comfort foods.

Once, I made the VegNews recipe a layer of nooch sauce on top and diced ham-style seitan in the middle and hash browns for a potluck competition. It was insane. That is all.

Mac Daddy is pretty great.

I'm spoiled on the seed/nut sauces since I have access to a Vitamix--no soaking required. When I move out, I'm going to miss that since I'm pretty sure my mom will check the boxes to make sure I don't try to sneak it out!
