OMG thanks to all who shared recipes and links!!!! I *finally* feel I can hang out with the cool kids now since I made my first steamed seitan sausages last night, the Italian Feast ones from Vegan Brunch.

I assume these variations will work with the recipe from Vegan Brunch, it yields 4 sausages? Some steamed sausage recipes use use navy beans, other pinto, and I'm sure other recipes may use other beans as a foundation. How do I know what beans will pair well with all the variation above? For example the hot dog recipe, would navy beans be just fine to use?

Yeah just do trial and error. For Mexican I always use pinto but I usually just do whatever I have on hand and it works fine.

thanks, will do! am excited about the 2 hot dog variations.

i assume that with any of the variations and original 'vegan brunch' recipe, that i would do 6 slightly narrower sausages rather than 4 thicker ones?

haven't spent a cent on fieldroast since I found this recipe - and working with it got me passed my fear of puffy, rubber, boiled seitan... now I admit I'm obsessed and make it once a week with different flavorings each time.

you can also use other vegetable purées in place of the beans - like roasted eggplant, sautéed mushrooms, steamed carrots or sweet potato, even peas! whatever seems like it will go nicely with your spice blend, and has a similar consistency to the bean mash.

I've also experimented with wine and beer in place of the broth with good results - but I'd recommend avoiding wheat beer as it ends up tasting too "bready".

also - if you reduce the VWG by 1/8 to 1/4 cup and/or add a bit of extra liquid so that the "dough" is almost wet and oozing way too much to be wrapped in foil but you do it anyway - the resulting texture is more hot-doggy - or should that be hot-diggity? ;) - good for eating on a bun but will fall apart if you try to put in a saucy dish like beanie-weenies.

hot-diggity, love that, i might need to borrow that phrase. i was thinking of calling them hot dangs ;)

i haven't bought any processed meat substitutes since going vegan, but i couldn't believe how expensive they are! i saw fieldroast "sausages" at earthfare, a pack of four for $6.49!!!! yikes, am so happy that isa taught me how to do it myself for so much less!

and thank you so much for the tip of using veg purees in place beans, good to know that the standard recipe is flexible.

copy & paste is your best friend.
i feel like i have a seitan variation user's manual now. after doing some formatting, i go it down to 3 or 4 pages and hole punched it for my recipe binder. i'll need to make a special "seitan" tab just for it which excites me :)
