Maggie Muggins wrote: cashew gruyere and cashew cheddar cheese….I’ve been eating the gruyere with crackers but I still don’t know what to do with the cheddar, there’s a lot of it! Is it meltable cheddar or just sliceable? If meltable: mac and cheese, grilled cheese sandwich, cheddar and broccoli omelet or quiche. For non melting/either way uses: with crackers like the gruyere, on sandwiches, grated and sprinkled on chili or salad, with apple slices.

Vegan Diner smokey mountain cheeze, AFR falafel, chickpea cutlets that I need to freeze in a hot damn minute, and random back of the fridge pasta sauce that i cobbled together last night.

Louisiana red beans, citrus marmalade, and some old leftovers of stew and chili that need to be tossed. We've been trying to use stuff up as much as possible since we'll be going out of town in a few days for a couple of weeks.

Baklava, and vegetable soup. Our fridge is pretty sparse right now.

However, I made ham-ish saucisses from Hearty Vegan Meals tonight for an volunteer omni potluck tomorry, and I am cautiously optimistic. :D

Butternut alfredo, leftover roasted french beans, roasted butternut squash, chopped carrots for snacks and to add to soup, broccoli soup. (And kimchi, but that's always there I guess. White and regular!) Soon there'll also be maple-chipotle tofu marinading in there.

This afternoon, I finished off the noochy garlic bread mixture from Chloe's Kitchen, but I still have some leftover PPK pesto gnocchi soup, black beans I cooked last night, a little bit of leftover sage gravy from Vegan Diner. The beans were for Viva Vegan gallo pinto, which is currently on the stove along with some roasted potatoes that I cooked up with the marinade from the chipotle-potato-chorizo tacos. I was also going to make AFR Arabian rice & lentil soup, but that's probably too ambitious for midnight.

I was thinking of making it Christmas Eve for the fam myself. Let me know if you want me to PM you the recipe. I haven't tried it so can't vouch for it yet, but I always love Terry's recipes so I think it's very promising! There's also a baklava recipe in ExtraVeganZa but I haven't tried that yet either. I forgot that I also have some leftover rosewater date semolina squares that I'd made on the weekend still around in the fridge (I cut off a wedge of them for myself before taking the rest to the potluck. Yummy!)

Mine is a bit sad since we're having a fridge clean out week- all leftovers, all the time! But we've still got:
Half a seitan roast (the PPK blog recipe, stuffed with the Vegan Diner dressing) Sharp cheddar (from Artisan Vegan Cheese, heading into its third month of ageing!) Rejuvelac Sweet chilli sauce Strawberry basil jam Beer mustard Bajan seasoning Red wine chocolate fudge sauce Black tea plum jam Blood orange and whiskey marmalade
And I just ate today's batch so it's not there anymore, but pretty much every evening I mix up a tofu scramble and put it in the fridge, so I just have to dump it all in a pan for a super quick breakfast in the morning.
And of course, the freezer is crammed to capacity with ice cream, muffins, sausage rolls, flatbreads, seitan and gyoza.

I'm feeling pretty slack compared to a lot of y'all! My fridge has homemade pasta sauce, and that's it.
I can't seem to get into the swing of prepping food for the week ahead; I would love to plan ahead more often, but my fickle brain always craves something other than what I had planned for.

I forgot also that I have a bit of avocado salsa left over from the weekend potluck that I couldn't stuff into the stuffed potatoes I made. Dippin' some tortilla chips in that salsa in front of the TV before bed tonight.

I thought about taking it to my family's Christmas Eve, but were apparently doing an Italian theme. I have to wait for some sort of function, 'cause if I just make it for Fred and me, I'll eat half of it within the first hour.

I don't have much. I have some leftover seitan stew that was an attempt at veganizing my mom's beef stew, and yummy cornbread from Alicia Simpson's Q&E Vegan Comfort Food.

Oh, man, every time I rummage around in there, I find more stuff. I also have some leftover Southern Fried tofu breading in the fridge at the present time.

I have lots of leftovers this week since my husband's out of town and the food's getting eaten a lot slower because of that!
I've got 500 Vegan Recipes' pumpkin fauxsages, sweet potato hummus, lentil dip, cream of potato and mushroom soup, massaged kale salad with tahini dressing, pesto and spinach baked pasta, some old pumpkin granola, eskimo cookies, and peppermink bark.
And don't get me started on the freezer! I bake a ton of goodies around the holidays and freeze them, so I have basically the entire contents of Vegan Cookies Invade Your Cookie Jar frozen in there! Slight exaggeration, but I do have a lot of treats in there. Oh, and in the pantry there's some maple chipotle spiced nuts I made today, yum!
