Ultimate patty melt from hearty vegan meals.

Chick'n patty on a kaiser roll, home fries, and mac and cheeze with peas an broccoli.

Soy curl roasted fajitas with peppers and onions, black beans, and all the beer. Well, at least 11 oz of it.

Tofurky roasts were on sale so I bought one, basted it with a mustard cider sauce, then fell asleep and burnt it. Oops. I'd meant to do a salad and roasted carrots too but well, I didn't.

I have some lentil and butternut soup thawing, but I'm all souped out right now and I could save that for lunch tomorrow so instead, I was thinking of making a rustic chickpea flour sort of flatbread/crisp and carmelizing some onions and adding some chopped tomato to serve over top and having that. Trying to use up my leftovers!

Most snacky dinner ever - Tostitos, Triscuits, some random leftover baked goods from the freezer - tomorrow I will eat REAL MEALS! :)

I've been on antibiotics for the past 10 days, and today I'm done and can drink! So I'm planning something simple but Italian so I can have a glass of red wine. Angel hair with garlic and olive oil for sure and then probably just whatever veggies look good with some cannellini and Italian herbs, capers, balsamic vin. etc.

I picked up four very bruised avocados for less than a dollar, so we're having taco salad tonight.

This calls for translation, explanation, and photos!

I'm lazy and jealous of these good meals: couscous, edamame corn salad, and Gardein tenders.

Oops! I wasn't even thinking of translating. Gimbap is rice (bap) rolled in gim (dried sheets of seaweed) with other veggies. Something like sushi, but I think it's closer to onigiri. The rice isn't vinegared, but seasoned with sesame and salt. Samgak is trianglular in shape. Kkakdugi is a kimchi variety made with radish in place of cabbage. Sigeumchi namul is spinach with green onion and garlic and sesame seeds. Buseot bokkeum is stir-fried mushrooms.

That sounds marvelous.

I'm going to a craft-making potluck and the hostess has prepared vegan tofu lettuce wraps, which is adorable, because she does not know any other vegans. I'm bringing my "I have no time" potluck standby, which is the VB avocado potato salad, and is always well received.

Christmas potluck for my yoga studio! Fruit salad, quinoa bean salad, veggie chips with delicious black bean dip.

Leftover red beans and rice, with a side of peas. We're leaving town tomorrow, so cleaning out the fridge a bit...

I was gonna make chili, but the only bread type thing we had to eat with it is papadoms, so i just used curry spices in my chili, so it's basically like a soupy kidney bean and seitan curry. i think it's going to be good. and we should have enough to fill in all the missing meals between holiday stuff for the next few days.

Leftover veggie pot pie stew and sweet potato biscuits from AFR and soon, banoffee pie from VPITS for dessert!
