I have been in the process of moving, and in unpacking we found my boyfriend's juicer, which I am excited about. So far we have just made juice with the fruit we have, which has been delicious apples+oranges+clementines, but I was wondering, what kind of interesting vegetable combinations have you guys personally tried and liked? I know there are plenty of recipes and suggestions out there, but I wanted to hear from some people who have drank them, and thought they tasted good rather than just drank them for the health benefits.
Speaking of health benefits, does anyone know if it counts as fruit/vegetable servings to drink the juice? I know it still has all the vitamins, but none of the pulp and fiber, so is it still good for you, or not? How does one count the nutritional info such as calories, vitamins, and servings of fruit or vegetables when drinking juice made from them? Maybe I cannot count these things and should not try to do such, but it would be better if I could.

I usually just toss in whatever I have. Carrots are good mixed with most fruits. A bit of spinach works well. Juice does count as a serving of fruit, even minus the pulp. My husband likes to add the carrot pulp to salads. Or you can add it to compost, house plants, etc. Here are some benefits http://www.juiceman.com/t-benefits.aspx

Carrots are great, and DEFINITELY cucumbers. Anything with cucumbers will be incredibly refreshing.

All of this sounds great! I was also thinking of perhaps making a quickbread or sweet bread of some kind with the fruit shavings. Think this would work? So far I have been just putting the scraps in the compost, but they seem like they're still good for eating.

You could also try fruit leather!

Apple-Carrot-Kale juice!!!
Kale can be a pain in the asparagus to juice, but the results are very worth it.

I just started juicing myself, but my concoctions will only get really veg-heavy once my organic basket starts in July.
I made a juice for two with 2 small beets, 6 carrots, 2 pears, 1.5" ginger, 1/2 to 1 lemon, depending on how you feel about that.

does anyone have anything new to add? we got a champion for our wedding in 2005 (because i wanted to do banana whips) and it's been languishing since. i figured i should rectify that. (also in my search to find this thread, i found 2 other posts: what's your FAVORITE juice: viewtopic.php?f=18&t=10984and what to do with the pulp: viewtopic.php?f=18&t=10688 (which i would also like to know. i figured i'd make a broth with some of the veggie pulp and freeze it to add to future batches of juice to keep it cold when not in the fridge, and also to extract more nutrients, of course.)

mmmmmmmmmm! i just made apple-grapefruit-orange-cranberry-sweet potato juice.
(2 servings) 5 apples (i counted my 2 tiny little macintoshes as 1 apple.) 1 grapefruit 1 orange 1/2 sweet potato, peeled small handful of cranberries. 1/4 cup?

wow, sweet potato in juice sounds tasty. I've never heard of someone doing that before, but I bet the leftovers shreads make a pretty good breakfast/dessert bread.

i just learned today that it probably shouldn't be the base of the juice, because it's kinda starchy. (i had to strain the juice because it was so gritty.)
small handful of cranberries 3 sweet potatoes (scrubbed well) 1.5 apples pinch of nutmeg
the flavor was good, but i think next time i will add more apples, and maybe more cranberries. (i got a lot of pulp from this one, i'm definitely looking forward to the muffins i'll be making with that.)

yeah, i had a really hard time at the end of my "mean green" juice. i must not have added enough lemon.

Strawberry-spinach-pear is my wife's current favorite. Orange-carrot-cantaloupe has been a favorite in the past as well. Anything with kiwi tastes great. Like kiwi-cucumber-pear is really good.

Living in a house with a juicer and two other cyclists is fun. We do some kind of beet juice almost every night. A current favorite is beets, carrots, broccoli stems, and ginger. Sometimes we add the beet greens, but lately we've just been cooking them.

I had some pear-celery-cucumber-lime juice this morning. I drank half and then blended the other half with spinach and kiwi. Good! And super green!
I saw someone on instagram posted a juice with sweet potato recently. I've never thought of juicing sweet potatoes before so maybe I'll try some combo with them tomorrow.

whoah!!! 5 oz spinach + 1 lb strawberries and an apple is so so goood! i could have probably even shoved the rest of the bag of spinach in there and it would probably still have been mighty tasty.
also, a recipe i got from reboot with joe a sm-med butternut squash peeled and seeded, 2 apples and a dash of cinnamon. mmmmm.
