I had no time last semester to pay attention to how I was eating, plan out meals, watch my fat/sugar intake, sleep well, the list continues. Do you have any healthy homemade, fresh, creative snack ideas to get me through this semester? I have more of a focus on doing this right this semester. Plus, I have a boyfriend who basically eats from the same plate as I do, so we'd both be gaining from eating a lot healthier. I am also gluten-free, though he is not. Any creative ideas?

I appreciate the old threads to peruse, but I think it would be fun to bounce ideas around again. Can we ever have enough ideas for healthy snacks? I recently made these salt and vinegar roasted chickpeas, which were delicious. It did make my house smell like vinegar while they were cooking, though. Don't try to cook dried chickpeas in vinegar as she notes might work--I'm pretty sure it won't due to acid inhibiting softening of the chickpeas. Of course, there's always kale chips. I love them with nooch and garlic powder, and just recently discovered that throwing on some daiya pepper jack is delicious too. Only a little more work than regular nachos, and you get a nice big serving greens.

Mmmm...I'm definitely going to try to make those salt and vinegar chickpeas! I love vinegar and I wouldn't even mind if my whole house smelled like it haha.

I like to dip apple slices in tahini or almond butter. I also love trail mix type stuff.

You can mix almonds with some salt and liquid smoke, then bake them until they are dry. A homemade version of smokehouse almonds.
You can probably play around with this idea and do other flavored nuts, but I haven't...yet...!

We make our own trail mixes here for the boyfriends lunch...Mostly he likes sea salted almonds with raisins! Simple!

If you are looking for something low-carb: oven-baked tofu slices. They're great on when you're on the go, you don't even need a fork. I carry them around in my purse all the time and have them in between meetings and such. They keep you full for a while and don't mess with your blood sugar levels the way more sugary things like dried fruit do. Anybody else got any high protein snack ideas?

Dry roasted edamame! I discovered it recently (bought it at Marshall's of all places), and it is now my favorite snack. Super high in protein too.

If you've got a decent blender, green smoothies are awesome. I used to work super early in the morning, so I made them at night, using cold ingredients, but not frozen, so when stored in the fridge the texture stayed pretty much the same until I drank it in the morning. You can use whatever fruits and veggies are cheap and/or in season.
