i want to make the stuffed shells from Chloe's Kitchen and it calls for 2 tsp Italian Seasoning. what can i throw together to mimic this?

It's usually a pretty equal mixture of thyme, oregano, and basil with a bit of garlic powder, and then sometimes you'll see marjoram or rosemary in it.

mix as much of these together as you have on hand?

That's what I always do. Why take up one more spot in the spice cupboard when I already have/need all the ingredients?

so i thought i was being all fancy chef and i made my own Italian seasoning:

then 2 seconds later what do i see out of the corner of my eye on my spice rack:



D'OH!

I just mix up enough to last for a while when recipes call for this stuff. Every recipe's a little different. You basically just throw together all the Italiany shiitake in your spice cabinet.
