Do these beans taste like magical candy or something? What makes it worth all the work? Could anyone describe what they taste like? I'm interested!

The blogs & threads I've been looking at seem to say they're worth the work, from a very traditional Mediterranean stand-point. I picked them up on a whim, vaguely recognizing them from perhaps, antipasti platters of my incredibly Italian-influenced childhood?

Today I rinsed them, cooked for an hour in the same amount of water (which was 6 cups) as per the link above:

These are served as bar snacks (instead of peanuts or pretzels) in Cairo - but without seasonings other than salt. They are really good!

I don't know if you are talking to me, but I think the ones in Cairo were brined, not necessarily pickled - they weren't sour.

Update! I didn't have time to do anything last week, but they've officially made it to mason jars with olive oil, balsamic vinegar (the really, really good stuff!), red wine vinegar, fresh garlic, minced garlic scapes, fresh basil & parsley, coarse salt, whole black peppercorns and a little tamari, as per the recipe above. I can hardly believe they've come this far.

Okay, real talk. I tried one, and it's somehow not as soft as the one I tried two weeks ago? Weird. It wasn't bad or inedible, just surprising.
Going to give them some more time in the flavored mixture til I serve to friends.....

A bit, but not as much as I'd like! They were certainly edible and the brine was great but they weren't the tender bite I've had on antipasti platters.
I'd definitely cook them longer during the first go next time around.
