I apologize if this topic has been done to death. I tried using the search function and it only works about half the time. I do not like sweets for breakfast so I would like to make a couple of sushi rolls (using brown rice of course) for breakfast for the week. I realize the rice is sweetened but that is ok. I'd love some ideas beyond avocado, cuke and asparagus. It can be raw or cooked, things you tried at restaurants, seen on menus, made yourself etc. I eat everything and don't have allergies. I'd like to stay away from faux meat products. Thanks so much!

I like doing a combo of pickled radish, fried tofu and avocado. If you're feeling ambitious then shredded cucumber and carrot also go nicely in the mix.

Marinated/roasted red peppers work better than you might think.

Vegetarian "ham" (or something like Tofurky hickory slices) cut up works well with crispy veggies like cucumber.

I love thinly sliced carrot in sushi. Our local place makes mango and carrot rolls. Have you considered onigiri? I think they're a little more fun, and they can be filled with whatever. A favorite comfort meal of mine is a cup of sushi rice covered in thinly chopped veggies, silken tofu or smoked tofu, edamame, even peas, and sprinkled with gomasio and soy sauce. Easier than rolling sushi, but same flavors.

What ever it is thinly sliced (thin as or thinner than matchstick) makes nice texture:
-cabbage
-sunchoke
-raddish
-kimchi
-celery
-carrot

sky is the limit but something I have not tried but would like to is run some nuts like walnuts or even almonds in the coffee grinder to get them fine and work a layer of them in there.

Mmm, sushi. Do you have an Asian grocery store near by? Mine has this awesome pack of pickled radish spears on one half of the package, and marinated burdock spears on the other that I love getting for sushi.

I like adding toasted sesame seed, cilantro, and/ or green onion to just about any other filling.

Shiitakes sliced and cooked in sesame oil, rice wine vinegar, tamari and sriracha. Sometimes I like to add ume plum paste. Actually I just like adding tiny bits of ume plum to any veggie roll.

Love the spicy tempeh rolls from veganomicon.

Veggie rolls with raw red pepper.

Lightly steamed green beans and peanut sauce.

I would pretty much eat anything wrapped in rice and seaweed.

These are all great ideas. i am going on a field trip to the Japanese market in my area. I'll look into some of the radish suggestions.

Also mango, thinly sliced raw jalapenos (believe me!), oyster mushrooms cooked in sesame oil with a squirt of lemon, steamed burdock, minced chard sauteed with some red pepper flakes and finished with miso. The sky's the limit!

Beets - pickled or just cooked, red pepper - raw or roasted, sundried tomatoes, avocado, steamed asparagus, carrots, cucumber, yam/sweet potato, tofu, mushrooms

One of my favourite restaurants in Vancouver does a spinach and peanut sauce roll that is divine. They also do a pretty weird but intriguing roll with artichoke hearts, tempura asparagus, and miso cream cheese that I've been meaning to recreate at home with Tofutti. My friends rave about it.
