 Post subject: Help me save my frosting?!

I'm making the Coconut Heaven Cupcakes from VWAV and the "Frosting" is staying a runny icing consistency and not getting creamy/fluffy. I used Earth Balance instead of margarine and I suspect this is the problem. Anyone know how to save it? I convinced myself it needed more fat, so I added another 1/4 of Melt Spread. Now it's separating. More powdered sugar maybe?

Earth Balance is thicker than margarine so I don't think that would be the problem. Maybe too much liquid? I don't know what Melt Spread is though and I haven't made this recipe. In my experience, thickeners for icing would be shortening and powdered sugar.

Anyway, if it won't thicken, runny icing can be delicious too... just don't forget the napkins. :)

Earth Balance is what the recipe is referring to if it says vegan margarine. I responded to your post in the cookbook forum though.

You can also maybe add shredded coconut. I don't think that recipe is supposed to make a fluffy frosting though. It never has for me. You need to use the recipe from the cupcake book for the kind you're talking about.
