I made potato-spinach curry last night, put it in tupperware, but it never made it to the fridge. It sat out on the counter in my 68-70F kitchen for about 12 hours. Bad news?

Me too. Depends on your climate though. Here, during the 'dog days' in july/august everything goes bad ten times as fast as it usually does.

As someone who's taken numerous courses involving food safety (ServSafe and NYC Food Handler's, whatsup!) I have to say that sounds like a serious gamble. Also, lots of things lurk in food even after they're cooked and after 12 hours, the number is pretty high! Plus, potatoes are CHO heavy and therefore, many pathogen live and thrive. However, the acid from what I'm assuming was the tomato in the curry base may have helped stave off some of the pathogenic growth... Still! I would not risk it.

I just made a batch of cookies using about 2tbsps of sweetened shredded coconut. And realized as I am taking them out of the oven, that the shredded coconut was from an open bag with an expiration date of 2010. It tasted fine, but yeah - 3 years past the expiration date.

This is a don't eat situation right? I am going to be tossing a full batch of yummy cookies :(

Have you still got the bag of coconut? Give it a sniff, if it smells ok (not rancid), taste a bit. I'd say you could be fine, dried stuff will often last for ages, but not be 'optimal' after the expiry date.

It smells and tastes fine! I ate a bunch of it and it was yummy! Thank you for the feedback and tip - at least I feel better about eating a ton of the batter with my toddler!

If it's dried, the expiration probably has a lot more to do with quality/freshness than safety. I'd eat them.

I'd eat the shiitake out of them.

I recently used the last remaining stuff from my bottle of Amy's Worcestershire Sauce, then saw it had an expire date of 2010. :)

i don't know why i ever even look at this thread, because no matter what the thing is i think, "of course you eat that. why wouldn't you eat that?" dried food is immortal in my mind. if i've been keeping it in the cupboard and it doesn't have that old-oil smell that some things get, it won't even occur to me to wonder how old it is, especially if i'm going to cook it. and i'll eat any condiment that doesn't have something growing on it. BUT, i do keep a really close eye on the date on the bag of dry cat food, because it takes her so long to go through it, and i'll toss a can if she sniffs it and walks away, even if it's been open for only a couple of days, so i guess if i were feeding my kid i'd be less nonchalant about things. maybe. maybe.

Agreed. It could go rancid, but then it would taste bad. It probably would t have enough rancid oil to be harmful.

I would ... they keep bottles of it in bars for years ... no refrigerated ... you know the standard sniff test ... tasting would not work as it is too hot on its own ...

I didn't think you had to refrigerate Tobasco sauce...? I couldn't find it anywhere on my bottle of it! Should I be keeping it in the fridge?

I mean, there are some things I'm more cautious about. For example, sprouts. But expired dried or canned goods? If the can is intact or if the dried foods don't smell rancid, i don't have a problem eating it.

So in the basement we have a mini fridge. It contains two 4 litre jugs, one pure maple syrup and one is Frank's Red Hot sauce. We keep them there because they take up too much space in the main fridge and we just refill smaller bottles to keep in the main fridge. My husband went down there today to get more syrup and discovered the fridge wasn't closed properly. It was open about an inch or two. It has probably been like this since the last time my son refilled the hot sauce. It could have been up to 2-3 weeks ago. The fridge was still running but since it wasn't sealed I am not sure if it could keep a cold enough temperature that long. Both bottles are nearly full and I'd hate to throw them out especially since that syrup is EXPENSIVE. My husband thinks that both maple syrup and hot sauce should be fine but I'm not so sure. What do you think?

I'd say they're fine. I came home the other morning to discover that my fridge had been cracked for about 12 hours, and everything in it was still fine. I know that's not 2-3 weeks, but I don't see hot sauce and maple syrup as being super perishable, even though the bottles say to refrigerate them after opening. I mean, I don't refrigerate my agave. And my boyfriend doesn't refrigerate any of his vinegar based hot sauces. And we're both still kicking.
