My mom bought me some fancy expensive pickles but didn't realize they're the type that need to be refrigerated (even though they came from the refrigerated aisle at the store). They sat in her kitchen cupboard for 2 days. This is giving me tragic feelings because I never buy those pickles due to the price, and now that I can finally have some they might be ruined! Bahhh.

So, kosher dill pickles left out for 2 days - toss 'em or give 'em a chance?? I know there can be a risk of botulism with such things...

What is it about them that needs refrigeration? Oftentimes things that need to be refrigerated only after opening are sold from refrigerated sections. So, if they're packed with vinegar I would think they would be fine and botulism improbable. If you're super worried, store them in the frig and contact the manufacturer.

They're raw, probiotic pickles (the brand is Bubbies). They were never cooked or pasteurized. It's kinda like leaving yogurt a room temp I think...

My soya milk has gone super thick, it was like this when I opened it (sealed, shelf stable container)...is it bad? I had some yesterday and didn't get sick but i tried pouring it on cereal and it just sits on top, ddoesn't sink in or anything.

I can't tell if it tastes bad or not....I'm no good at these things.

Yeah I figured since I'm feeling gross now. Annoying as it was well in its date and sealed etc.

Bleh like they tasted bad?! Awh man I was super hopeful they'd be still fine. :(((((( not bubbbbbiessssss! I'm actually super curious about how you knew they were off, I make not-shelf-stable pickles all the time and usually obviously keep them in the fridge but sometimes they do somehow manage to end up at the side of my bed all night long. ;P

I hadn't eaten Bubbies in awhile but I recall them being crunchy and delicious, and these definitely... weren't. Soft and slightly bitter even. Not totally spoiled or anything, but the quality was gone.

I wouldn't worry about your bedside pickles though, it sounds like you're doing ok!

Bedside pickles sound like a really good idea.

Yes. Worst case, they're soggy or stale.

I defrosted the fridge the other night and forgot to turn it back on afterwards. I realized about 8 hours later and am trying to figure out what to keep and what to toss. I used the fact guide to figure out most things but they don't have anything about seitan or products like Beyond Meat. The almond milk and Silk creamer were just fine. Do you think the beyond meat would be safe to eat if I bake it at a high temperature? Thanks!

If I'd just left it on the counter overnight by mistake I wouldn't worry but for some reason being in the fridge makes me more worried.

I've never had those Bubbies pickles, but we carry them at work. I'm curious about the white residue in the bottom of the jar. That's happened to pickles of mine before when I didn't use kosher salt. Is that's what's going on here? That white, cloudy residue gives me the uber creeps, but if they're good, I'd like to give them a try since I get a bit of a discount.

I have been thinking of this thread every few hours this last week- my house was left to sit for 7 months and so every bite i take belongs here.
so far i've discovered that the following things are OK after 7 months:
-open jars of stinky tofu and fermented black beans (what, it's going to go bad??)
-most kinds of japanese pickles and umeboshi
-peanut butter
-most dried staples except for what went moldy (shiitake mushrooms) or buggy (wheat products, not corn products. go figure)

the things that went bad were surprising- sealed jar of jelly, molasses, and certain spices but not others (bahian pepper flavoring, some herbs like calendula). and the oatmeal, which was disappointing. dry oatmeal!

SO. Whenever I drink red wine, I almost always cannot finish whichever glass I'm on by the end of the night (no, I'm not a lush! Most of the time this is just my first and only glass, but sometimes it's the second). I don't know why this is, but with red wine when I feel 'done' then I really just don't want another sip. So fairly often, when I come home from work the next day, instead of pouring myself a fresh glass, I just top up this half-full of day-old wine glass. Obviously, I've not noticed any ill-effects, but, I'm curious if there is a reason to avoid doing this. Should I be trying to pour my unwanted wine back into the bottle?

I think that after red wine sits out for awhile, it becomes vinegary. At least, that's how it tastes to me if I try to drink wine I've let sit out for too long. I don't know if it's bad for you…but it might be why you don't want to finish your wine? Does the topped off, half day old wine taste different than a glass poured straight from the bottle? I have to admit that I've thought of doing this because the same thing happens to me with wine sometimes, but the memory of what those day old half glasses taste like have stopped me.

Nah, I mean I drink it as-is sometimes, tastes same-ish. (I don't have very refined tastes, but yeah I mean it tastes fine)

The half drunk glass will have bacteria from your mouth in it, not to mention any effects on the quality from being left open to air. There isn't enough alcohol in wine to have a significant antiseptic effect, so I would caution against keeping the wine for any length of time.
