Trader Joe's steamed vacuum packed lentils with a "Use By" date of 11/20 and it's now 12 days later Still in plastic and always refrigerated, with no bubbling or other warning signs.

Probably okay right?

Yeah, I think vacuumed sealed and in the fridge would be fine for most things. That expiration date is probably when they have to pull it from the shelves and has nothing to do with safety of eating.

Well it's not a "Sell by" date. It's a "use by".... Isn't there a difference?

Sometimes, I think it depends on the company. I'd open the package and see how it smells. Normally if beans or lentils are off they smell very off to me. But if they smell ok and aren't slimy in anyway I think they would be fine to eat.

An unopened can of matzo meal from 2012? 'Best by' date is February 2014. Not worried about getting sick, just about staleness...

Almost two years past it's prime? I'd maybe use it if only a teaspoon or a 1/4 cup were needed, but not as a main ingredient.

Just taste a pinch and see if it's gone rancid. If it's been in a sealed can at a moderate temperature it'll probably be okay.

I would guess high probability of staleness, but low probability of making anyone sick. You could always taste a bit, but sometimes staleness is a little hard to detect. If it were me, I would buy fresh stuff unless I were really hard up.

Found a packet of instant yeast that went off exactly a year ago. Baking experiment! The dough is currently rising in my kitchen cabinet (out of reach of the cats), with a dish towel jammed in the door. Smells delicious. I'm keeping you updated on whether it's just smelling delicious or actually rising too.

Yep. Rising and then rising again in the oven. As I thought, it's really hard to kill instant yeast.

Oh yeah, I'm using a big bag of expired yeast right now. It does seem to be slightly less active, so I just use a little extra. Mine's been stored in the fridge, so maybe that helped a little.

They get stale and impossible to cook. I'm pretty sure I have some in my cupboard older than that though -- I would say give them a try. Make sure you soak and cook them really well -- it may be hard to get them soft without turning them to mush, as I've found older beans seem to cook inconsistently (some beans will stay hard while others are nice and soft).

Not really a "should I eat this" but still a food safety question: I got some FYH vegan gourmet shreds (new to me, they're not readily available in the UK), one pack dated the 14th and one the 22nd. I'm not going to eat two packs of shredded cheese by those dates, how well do they keep? The packs say once opened use within 7-10 days. Do they hold up to freezing?

An unopened carton of Alpro drink yogurt that was good until the 24th of December? It's just a stamped date. It doesn't indicate if it's a "best before" or "use by" date. This is refrigerated yogurt and not a shelf stable product in a tetra pack. But it's also fermented, and contains sugar, so....

I'd be wary. I've had so many moldy yogurts that were supposed to still be good. I'm talking pink mold too.
