I have miso sitting in my fridge that is more than a year old.

Opened saeurkraut in a tupperware that has been there since june or so? It originally came in a plastic bag in the cold section of the store. I'm leaning towards yes eat it since it is already fermented, but want more opinions.

I have kimchi in my fridge that's older than that, and it is still fine, just tastes a little more "ripe".

How about.... FYH Cream Cheese that expired a month ago but has never been opened and the plastic seal isn't broken?

I bought a 10 pound bag of vital gluten some years ago and discovered yesterday the use before date was December 2009. I totally used it anyway and it was still good! Nothing weird happened at all.

Nothing weird happened at all. I think as long as it didn't get humid or the stale taste, it's probably OK. i can only get it in 10kg bags, so i do the same thing! I had cocoa powder get the stale taste and needed to chuck it, i was surprised. then again, we have serious humidity issues, mostly in the winter.

I feel like I've asked this before, but tamarind concentrate that is at least a year old, maybe closer to two? It's been refrigerated since I opened it.
The kind I find never has expiration dates and never looks or smells different. I take the lack of a date to mean that it's either good forever or already way expired by the time I get it.

I "inherited" an opened container of tamarind paste from a friend when she moved abroad, and I know that she got it months and months ago. It's still fine.

V'con SDT dip that I made for a Halloween party last night, but then left on my counter and forgot to bring to the party. I put it in the fridge as soon as I got home, about 7 hours later. I know someone is going to tell me to throw it out, but it's tasty and already made food, and I'm sooo tired.

This is more a potential than actual "should I eat this?" How long would you say it's ok to keep uncooked tempeh out of the fridge? Tofu? Would one be more/less iffy than the other?
After a year of relying on convenience food while at his place (his kitchen is not set up for cooking fresh stuff ) my omni bf has suggested I bring some stuff and cook for him like I do at my place. Great, except that he lives in Belgium, which means I'll be travelling around 4.5 hours to get to his place. Going shopping for the type of stuff I normally use where he lives would be kind of a pain, so I'm planning on bringing a bunch of things. I was thinking of doing something like Isa's Tempeh Sausage Crumble over pasta marinara, or just introduce him to the joy of a tofu scramble, but I want to make sure I don't poison him by using something that's been out of the fridge too long. I'm especially worried because he has Crohn's and is thus extra-sensitive for things that are slightly off.
If it were just me, I wouldn't hesitate to eat tofu or tempeh that had been unrefrigerated for 5 or so hours, but I've got kind of an iron guy. But I don't want to introduce him to the world of vegan cooking by giving him food poisoning.
Thoughts? Would you consider keeping tempeh/tofu out of the fridge that long ok or would it be tempting fate?

I'd guess that tempeh is safer out longer than tofu because it's already moldy. But maybe it works the other way. I'd just stick it in a cooler to be safe.
