I've always pronounced it se-vee-che (as in Che Guevera). It's Latin American, not French, so the 'ch' is pronounced.

Agree on the ceviche.
I got into the habit of pronouncing chipotle as chih-po-tull as a joke... now I can never remember how it's actually pronounced.

seh-VIH-chey. My auntie who helped raise me lived in Peru for four years and learned to make the traditional raw fishy ceviche there. That is how she said it.
You do say bagel funny.
The mister says almond ayl-mund instead of ahl-mund. It's pretty cute.

Is celeriac "sell-AIR-ee-ack?" Because I've always said it that way, and since I've been introducing it to people who've never heard of it before, I'm starting to worry I am doing it wrong.

(AGAVE) is it a-gahv or a-gah-vey? I've never seen and 'accent on the last e, so I'm not sure if I should pronounce it.

There was a Jack in the Box commercial where Jack goes to a Mexican market (or something) and is introduced to chipotle peppers. The woman at the stall kept saying 'chi-POHT-lay', and he would say stuff like 'chop-a-TOP-lay' and 'chi-POOT-el'. For some reason, my sister and I thought that was hilarious, so now we call each other Chipootle. Back on topic - I always say uh-GAH-vay for agave.

We also say "juh-lah-pin-oh!" instead of jalapeno in my house hold, because we are way too hilarious. But I can always remember how to ACTUALLY pronounce that if I go out somewhere and want to like, order the jalapeno special or something.

I know how to pronounce seitan, but something comes over me on the rare occasion I say it out loud and I pronounce it "see-tan" I kind of hate it about myself.

I usually always pronounce "seitan" like "satan" even though it's not technically right, but then when i'm talking to other (non PPK) vegans about it i get all embarrassed and try to say it right but always end up saying it more incorrectly.
and how -do- you pronounce edemame? I think I know but have never been sure.
