Yeah, I think that's actually how I say it. And I usually change it up for pie to be exciting.

If I'm talking about pecans themselves, I say puh-CAHN, but if I'm talking about pie, I say PEE-can, just because I think it sounds funny (but only when talking about pie).

A lot of these really depend on where you grew up. I'm from CA, so I have a west-coast generic accent... and I love hearing how people from other parts of the country (or world) pronounce things. :)
I say:
pecan = peh-CAHN
worcestershire = woorsh-ter-sher
almond = AHL-mund
Daiya = DIE-yuh
seitan = SAY-tan (although I do think I mispronounce this one and it probably should be say-TAN)
tempeh = TEM-pay
I'm still not sure on celeriac -- is it sell-AIR-ee-ack?

Do you pronounce caramel, CAR-a-mel or CARE-a-mel?

i'm glad i speak the languages i do, since about 85% of all the questionable pronunciation falls under them..... Acai screws many people up because the word is actually açaí (accent indicating stress and 2nd syllable, and the ç is an "s" sound) but most folks don't have the ç on their computers, so it becomes acai. Understandable, really.
I am not naming any names but there is a certain person who insists on pronouncing "Lecithin" as "Lethicin" in certain public forums. To the point where i seriously considered writing her a letter, but decided to simply not listen to her podcasts anymore.

I'd say you are pronouncing it properly, 'pan-ko', I guess it's a bit difficult cos it's not really 'pan' as in cooking pan, maybe a bit more like pahn-koh. http://www.forvo.com/word/panko/
