I made a bunch of pesto yesterday for a deconstructed eggplant parm dish (slice of grilled eggplant, smear of V'con cashew ricotta, another slice of eggplant, another smear of ricotta, grilled tomato slice, pesto drizzle) & I have a bunch left over.
What are some things I can make with pesto? My ideas so far: Pesto mayo (pesto + TJs mayo) for sandwiches, potato salad or pasta salad Green beans & grape tomatoes with pesto Basil veggie burgers Marinated tofu or portabellos Mix with the remaining ricotta & make a cream sauce for pasta Variation of the VB sausages / some kind of seitan? White bean hummus
Do y'all have any other ideas? Also, what is your favorite pesto recipe? The one I made was a bunch of basil, a splash of lemon juice, a spoonful of raw almond butter, some fresh garlic, a pinch of salt & a ton of olive oil

You could freeze it in ice cube trays to use at a later date, if you don't want to use it all up right now.

The uses for pesto are literally infinite. We stuff our freezer full of scape, cilantro, basil and parsley pesto for the winter every year.

You can put it on pizza, soups, put it on bread kind of like garlic bread, you can also use it like a marinade for tofu

My basil plant is growing like crazy so I'll be making another batch of pesto soon. I like a sandwich with smoked tofu (just pan fry it with some soy sauce and liquid smoke), sun dried tomatoes, a nice amount of pesto spread on the bread and some balsamic vinaigrette drizzled on the other side of the bread. Delish. You can also -put it on toasted rounds of bread like bruschetta -spread it on puff pastry, roll it up, and cut it like cinnamon buns to make pesto pinwheels -throw some cubes of some italian-marinated tofu in a pan with chickpeas. Brown them up, add some pasta and cover it all with pesto. -stuff it into a jar and send it to me.

if you mix in some ground coriander seed, ground cumin, some chopped fresh mint, and chopped cilantro you'll have some nice basil chutney to go with some samosas or other yummy Indian dishes.

I like the pesto pinwheel idea. how cute and easy for a party or better yet to stand in front of the cookie sheet and burn your fingers scarfing them all down!

I like to use pesto on pizza instead of tomato sauce. You don't even need to put faux cheese or any other veggies on it. Sometimes I put olives though.
