Pickle Juice

So, I just polished off a jar of baby dills and have half a jar of pickle juice left that I hate to throw away. I feel like there should be something I can do with it, but I am not sure what. Any ideas?

Also, I am not sure how to link this to the "what should I do with _____" thread so I am going to try but forgive me if I can't figure it out.

I put a space between the bracket [ and the slash / but if you skip the space it will look like this pickles

You could use it in salad dressings in place of vinegar, I think it would taste nice in an almond base ceasar dressing!

It is super-hip for cocktails right now. The one I hear the most about is the "Pickleback," a shot of whiskey followed by a shot of pickle juice.

I have no idea how this would taste -- I love whiskey and I love pickles, so I need to try it.

Or make fridge-pickled cucumbers, carrots, daikon, etc.

I came in to say this! Mix with vegan mayo and some nutritional yeast if you want it creamy.

Yes, drink it. It's also AMAZING in gin based cocktails.

Also, you can use it to make corned seitan. You brine prepared seitan in the pickle juice, then after a day or two or three, reheat it and serve it with some boiled cabbage. Mmmm.

Drink it, it helps for hangover. Also I add few tablespoons to any homemade nut raw "cheese", this juice contains a lot of lactic acid fermentation bacteria.
