I'm planning on making this for a BBQ. I have two quinoa-haters in my group though, so I'm wondering what might be a good substitute. Brown rice is a no go, as my husband really likes this salad, but doesn't like brown rice. Millet maybe? I am open to any unusual kind of grains as well! For some reason I don't think rice would be that great, but millet might have a better texture...Any thoughts? Thanks, PPK!

I used to hate quinoa with a passion until I had this salad at a potluck. I vote you make it without any substitutions & convert the quinoa haters in your life

But yeah barring that maybe israeli cous cous? I think regular cous cous would get really soggy with the dressing

i think rice would be good as would cous cous. bulghur wheat could work. pretty much anything would work for this salad. I can't see it being bad under any circumstances.

I second Israeli couscous (and also the idea of just making it with quinoa). It's so fresh and amazingly delicious that I can't fathom even quinoa-haters snubbing their noses at it.

thanks for the responses! i think i might go with israeli couscous if i can find some in time, otherwise i think you guys are right - this salad is way too good not to like!

I had a delicious and similar salad yesterday that had barley in it.
