I made meringue with orgran egg replacer, pectin & icing sugar. IT ROCKED!! Squirt of Soyatoo & berries - it's been such a long time and I never thought I'd every taste meringue again. Seriously - amazing!!

What proportions did you use? I'd be curious to try it.

Recipe is on the Orgran box, but I didn't actually think it would work! It was 90g of replacer, 1tsp pectin, cup of water. Whisk on high for 5 mins. Add 125g icing sugar. Whisk on high for 5 mins. It froths and increases in volume. Then bake for 2hrs at 110degrees C.
I'd never come across this brand of the egg replacer until last week.

Interesting! I wonder how you would go about making say, a lemon meringue pie? I'd be interested to experiment with it. Is Orgran a powdered egg replacer?

Yes - powdered. You can Google Orgran No Egg and see. I don't normally use egg replacer as I don't really find I need it for cakes etc, but I picked up a box of this as I hadn't tried it before and I was curious if it had that chalky taste.

It is very similar to ener-g. Ener-g usually isn't available in Europe/Australia but orgran is.

I actually had vegan meringue last week, made out of soy protein powder and it was awesome. I have yet to make it myself but I might just have to try this as well.
