So I'm having some omni friends over for a meal next week and they have requested lasagne. I have the cheesy topping part sort, but I'm a bit stuck for ideas on a filing? Whats your favourite? Any suggestions?

Tofu ricotta is an absolute must. It's the best. Maybe even with spinach mixed in. The tempeh sausage crumbles from vwav are really good in lasagna too. Also, sauteed spinach, mushrooms, and onions as their own layer. Sometimes I just make one total veggie layer with all the veggies I happen to have at home.

Oh yes, spinach and tofu ricotta is awesome. Also, butternut squash!

I make the marinara variation of the tomato sauce in the original Moosewood cookbook with a little tweaking (no honey, for one thing, no mushrooms and no fresh parsley.) It's a really hearty, veggieful sauce, so I don't add more veggies to my lasagna. I think the Vcon cashew ricotta is a must for the filling. It's so decadent and delicious. The first time I made lasagna vegan my brother-in-law said he liked it even better than when I used dairy ricotta. I made it a couple of weeks ago and meant to try some Daiya mozz on top, but I forgot.

Last one I made I did homemade marinara sauce with carrots, celery, mushrooms, eggplant, grated zucchini, garlic, shallots, and spinach. I layered that with homemade lasagna noodles and tofu ricotta and rice mozzarella.

In the end I made green lentil and spinach lasagne. But it did do a tofu ricotta layer as well. It went down really well and they ate the whole dish, I was expecting to have leftovers for lunch! also made a Chocolate ginger cake from VCTOTW. And as a bonus one of the girls had never eaten tofu before and she said she really liked it, yay!
