I found two blog recipes for vegan croissants, one on Vegan Dad and the other on Vegan Lunchbox. Has anyone tried these or have another recipe that they're fond of? This will be my first croissant attempt so I want to make sure that I'm using a really trusty recipe.

I haven't tried it but I'm willing to bet Vegan Dad's is good- he's been doing baking/bread posts for quite a while and seems really knowledgeable about it, and his recipes are always good. I've been bookmarking croissant recipes to try when I move to a bigger kitchen again- let us know how yours turn out!

pandacookie: I checked out Tami's recipe. She incorporates the butter into the dough differently than most recipes recommend, so it might be a bit risky. Thanks for the suggestion, though!

Quarantined: Vegan Dad definitely has some serious bread cred(ibility). I'll probably end up using his recipe with perhaps a few modifications according to my recent croissant research. I'll be writing about and photographing the whole process on my blog, so I'll definitely share the link when I'm done and probably post some food porn, too (this is assuming my croissants end up resembling croissants rather than blobs of dough or burnt crisps).

Seconded, i've never tried them but he's put a lot of work and experimentation into vegan breads and making the...i'm forgetting my words, but the thing where you combine cold fat with dough to make puff pastry. So I would trust him.

I've tried the Vegan Dad ones before and they were great! Mine didn't come out like croissants like his but that's because in general croissants are pretty difficult to make but I definitely recommend the Vegan Dad recipe. They were so good!

I really want sourdough croissants, I had some vegan ones I bought in a bakery years ago and they were amazing. Someday I'll actually start experimenting with sourdough baking, I'm totally a bread baking novice though so I'm scared.

Mmmm sourdough croissants sound like heaven! I think I'll start with regular croissants, then experiment with those if my croissants turn out decent.

I would really enjoy getting into artisan bread making, it seems so rewarding! Cheap, delicious, freshly-baked bread whenever I want is pretty much what I think of as total happiness.

I just finished them this morning! I ended up not using Vegan Dad's recipe because he used an instant yeast and all I had was active dry yeast. I ended up using Julia Child's recipe, which is vegan if you sub out the milk and the butter for non-dairy milk and Earth Balance (a.k.a. no eggs in the dough).

I ran into a couple of problems:

1. The butter got melty and sticky when I rolled the dough out for the turns. I'm fairly certain that this is because two hours was simply not long enough for the dough to completely chill (perhaps due to my refrigerator temp). I also think that this recipe calls for a bit too much butter (if there is such a thing). I think next time I would use 1.5 to 2 cups rather than 2.5.

2. I really wanted to form the croissants last night and just pop them in the oven this morning, so I let them rise in the refrigerator overnight. Except they didn't really rise...so basically I made mini croissants. A couple recipes said you can freeze them after they've risen and then pop them into the oven still frozen, so maybe I'll experiment with that next time. It also could have been a problem of the butter melting into the dough too much.

Despite these problems, the croissants and pain au chocolat (how could I waste croissant dough and not shove some chocolate in a few pieces?) came out really well. They were flaky and puffed on the insides. They might have been a bit doughy, but no one complained at the staff meeting this morning. The pastries were finished off quickly!

Things learned: 1. People like chocolate in bread more than just bread. 2. Everyone like butter. 3. Making decent croissants makes you seem impressive.

Hope this is helpful to anyone considering diving in!

I made some using a recipe from a French patisserie here in Aus that was featured on a cooking show, they turned out pretty well using vegan margarine (Nuttelex)

There's a word that filters into croissant. Just as the f word turns into fork, the c word turns into croissant. Some of automatically reverse filter, making this thread about delicious c.unt recipes.
