I have a bumper crop of it coming in from the garden and just can't come up with anything to do with it. Anyone have any ideas for me?

I use it in basically anything that calls for cooked spinach, because I like it more and it's usually cheaper. So if you have a favorite spinach recipe, maybe start there.

Also: there's a frittata in Vegan Brunch that uses it (I think it's chard and cherry tomatoes?) that's really good. I like to make the Vcon "simple sauteed greens" recipe with swiss chard as a side for about anything else.

I also chop it up and add handfuls of it randomly to other recipes... I like it as a mix-in for the Arabian Lentil & Rice soup in Appetite for Reduction, in basically any vegetable soup, mixed in to vegan mac'n'cheese, in a stirfry with tofu, noodles, other veg...

Last night I subbed chard for spinach in a Horizons cookbook recipe. I even donated two tablespoons of (forking expensive) pine nuts to the cause. It was delicious! Basically you saute a couple of cloves of minced garlic and the pine nuts in oil, add a bunch of shredded chard, and finish it with some salt, pepper, red pepper flakes and juice of half a lemon.

i used to make chard roll-ups. basically make a tofu salad with whatever seasonings you like (dill and lemon work nicely with the chard), then plunk some in the middle of a chard leaf and roll it up like an enchilada. put a bunch of these in a baking dish and bake at 350F for about 20-30 minutes, just enough time for the tofu to firm up.

you probably need to cut the stem out of the chard first (if the stem is big and inflexible), but you can slice them up and add them to the tofu salad for a bit of crunch, if you like!

My local FNB had about a boxful more than we could use so I have lots to deal with, too. I'm going to try making some chard chips tonight, then I think a bunch will go with chickpeas and carrots and peas and potatoes in deconstructed samosa, cottage pie style.

I'll join the Frittata loving brigade. The VB Swiss chard Frittata is one of my favorite things to make. It is lovely warm with some sort of sauce or equally good as cold leftovers.

Make the swiss chard with raisins and capers from Viva Vegan! It's the best chard ever, I swear. If you don't have the book, well, just make swiss chard with capers and raisins. And garlic I think.

Make the swiss chard with chickpeas and lemon from Color Me Vegan. As with the previous suggestion, the name tells you what's in it if you don't have the book. It's those ingredients plus an onion.

Thanks for all of the suggestions! I'm going to pick up the tofu I need to make the frittata on the way home from work, I have everything else which always makes it nice. I love love love pasta sauces made with cashew cream, so I think that will be the second recipe I try. For the other chard recipes mentioned I'm guessing you just remove any parts of the stem that are too tough and saute the chard in a little olive oil? They all sound like great side dishes. I will eat my way through that 4 ft by 4 ft patch of chard yet.

I made a chard tart that I really liked. I had to veganize the recipe because a lot of them have eggs and/or cheese, but I made the cashew ricotta from V-Con and just blended it extra smooth and used that in place of eggs and cheese. It's probably similar to the chard pie that JoJo mentioned.
