Any western New Yorkers here? I'm going to visit my mother's family in Niagara Falls and I want to try this out while I can get fresh kummelweck rolls.

A beef weck is basically that roll with beef, fresh horseradish and a sort of gravy or au jus for dippin'. And of course the pickle slice and fries!

The only trick I see is doing the thin-sliced beef roast. I saw a veg loaf on vegandad that miiiight do the trick. Like a lot of veg dishes, I'm going for the spirit of it rather than the exact flavor. Something I can make from scratch that kind of slices and pulls like roast beef.

For getting the thin slices, I'd say make a tough loaf of seitan and then run it through a mandolin. Just watch your fingers!

Sounds like you're on the right track. I'm from Rochester, not Buffalo so I never tried beef on weck pregan. Hope it works out!

I've tried it and didn't have much luck - on the thinner settings I got more of a crumbly mess. The thickest setting worked better but I could easily do that with a knife! A serrated knife works best for me.

Maybe cut the slices as thin as you can then cut into thin strips - I like this for a 'cheesesteak' or 'gyro' feel.

I wonder if Vegan Diner's Pastrami would work in this.

My parents were born and raised in Buffalo and I went to college in Niagara Falls. I had forgotten all about beef on weck.

I 2nd Petunia's suggestion that you use a knife to get really thin slices. It might be tedious work but in the end I think you'll be happy with the results. I'm from western NY and although I never did like beef on weck pregan, it is a staple at most group gatherings.

When I tried it, the seitan basically bounced off the mandoline.

I know nothing about beef on weck, but I do know that Vegan Diner's pastrami can be sliced with a mandolin.

I haven't tried the pastrami from VD (yet), but Julie's recipe for the Smoky Seitan Roast is pretty delicious. It slices up really nicely, and I'm sure it could be sliced nice and thinly with a mandolin. It's been so many years since I've had a beef on 'weck, and that being said, I've never had a full-on sammich. Back in my meat eating days years and years ago, I was picky and never had the horseradish or au jus, so I can't even say exactly what it would taste like.
