So I plan on making this today, however I'm seriously considering halving the recipe (not sure if I have enough wheat gluten!), and I was just wondering if anyone has any advice on whether I would need to cut the cooking times, and if so, by how much?

I have no advice to offer; however, I did want to say that I have been looking at this recipe for a while with the intention of making it myself (but I keep forgetting to buy hickory smoke when I go grocery shopping). Please let us know what you think of it. Maybe that will provide me with some extra incentive! :-)

I would NOT half the cooking time, but reduce it just a bit. Maybe shave off a 1/4 of the time, and check.
BTW, if you post a comment on the site of the recipe, you are very likely to get a more experienced response from the users who have made it, or from Vegan Dad himself. He is great at responding to questions.

I think it would depend on the shape. I often halve the recipe (haven't tried this one, but have made similar). I make the loaves shorter rather than skinnier and pretty much cook the full time. If you made a long, skinny loaf maybe cut the time back more.

I'm actually really surprised that VeganDad suggested half the cooking time!

Thanks for all the advice! I shortened both the steaming time and the baking time by ten minutes each, and it came out great. This is surprising, because I got confused and didn't add about a third of the flour! I don't know what it's supposed to turn out like, but mine was really nice regardless.
