Does anybody have any recipes or can point me in the right direction for some easy to make breakfast bars/cookies?

The recipe books I've got don't have any, and I could just trawl the net but I would prefer to hear from people that know the food tastes good!

Just looking for something quick to make in a batch that I can take to work to stop me snacking when I get there.

Vegan Cookies Invade Your Cookie Jar has a great section for wholesome cookies. One is even called breakfast cookies (and there's the breakfast variation of the banana everything cookies). So you get a bunch of choices in that one book. If you can't afford it, see if it's available at your library.

I grind up some nuts with dates and spices and turn them into bars - homemade Lara bars.

Sometimes I add dried fruit, and once I used cashew butter instead of peanut butter and it was really good. I keep them in a tupperware in the fridge at work so that I don't buy too many snacks. I always leave out the coconut because I don't like it, and add sesame seeds instead.
