Black beans. I have a pound soaking to cook tomorrow. I am planning to use some for dinner, some for lunches, and I'll freeze the rest for other recipes. I rarely eat black beans, so I can't decide what to do.

I was going to try the AFR mole, but I lack raisins and the motivation to go shopping.

Caveats: I dont like peppers or the Vcon burgers. Spicy is great, hot is not.

Black Bean, quinoa and corn salad? There are endless combos - here is one I really like:

I usually leave out the cayenne and add a little extra cumin. I have had good luck bringing this to potlucks - lots of people seem to like it.

Black bean enchiladas. I always add a sweet potato or squash to the beans plus some spices and canned tomatoes. It can be filling for enchiladas or tacos.

i also use whatever types of beans to make the vegan brunch sausages- black beans work nicely.

i just boiled a pound to make a black bean brownie recipe that looked so nice on a friend's blog- they were, unfortunately, horrid, and i can't even give them to the dogs to eat. so, erm, don't make that!!

I've been eating a ton of the black bean, corn, avocado salad from VV.

Also, beans and rice, chili, beer-glazed(Mark Bittman recipe), quinoa/black bean burritos or tacos, black bean hummus(or dip), mango/black bean/quinoa salad(either ppk blog or v'con).

Black beans and sweet potato are so good together. I was going to suggest quesadillas with black beans and mashed sweet potato. You can add some sort of cheeze, too, but it's not necessary.

I agree with all the people advocating for black beans + sweet potatoes. That is such a great combination, especially with some chipoltes!

There's a restaurant here in Sacramento that makes black bean/sweet potato burritos with an almond cream sauce. I keep meaning to recreate those because they are super good.

I'm boring and usually just saute garlic and onions with my black beans and just eat them plain. Or with tortillas/rice.

I made the Vcon mango quinoa salad, without the Evil Cilantro, and it's very nice.

Tomorrow, I'll make some burritos with sweet potatos. Maybe the Vcon yuca tortilla variation or YRR flautas.

I'm getting sold on black beans! They have never been my favorite, but the difference between canned and cooking dried is amazing, much more than I've noticed with other beans. I'm never buying canned black beans again.

Yum...black beans are probably my favorite bean. you can make the black bean chipotle soup in VwaV (it's kind of spicy though but not too hot I think).

Also, one of my favorite quinoa and black bean salad recipes is in one of Joanna Vaught's zines--I believe the summer one. It's the recipe with avocado. Has cilantro though...but anyway, it's one of my favorites and it's mild-tasting.

Black bean soups, of course. Beans 'n rice, refried beans, empanadas (yes, bbs are great with sweet potatoes - and the bb & sweet potato flatulas (sp?) in YRR)

I am a huge fan of making empanadas with them, with chipotle peppers too. If you have sweet potatoes with your beans, add some kale too or spinach for extra deliciousness. This works as well if you make black bean + sweet potato enchiladas and make some sort of creamy sauce with the greens in it for the topping.

This is the first quiona recipe I ever tried years ago! Still one of my faves.

I love black beans. The refried recipe is great, I make a huge batch and eat it all week long. Can't go wrong with soup either. Or Mexican millet from VCON with a ci
Up and a half of black beans and a cup of corn added in.

I know you soaked, but I do unsoaked with some onions, garlic, peppers spices etc in the slow cooker too.

Now I want beans

I mash black beans and flavor with taco seasoning and then use it for my taco meat. But pretty much everything else I do with black beans uses peppers. I realize the original post is old, but black beans and peppers go together in my mind! Sorry LW.

Stuffed Peppers with black beans and rice are the best!!
