I'm on my way to the co op this afternoon and am wondering if I can buy a few bags of Daiya to freeze for future use. Dairy cheeses can be frozen and then used later in cooked dishes without any noticable difference. Anyone do this with vegan cheeses sucessfully?

yes! you definitely can. the only cheese that freezes weird is Cheezly, but it still melts perfectly fine after being frozen. you can freeze daiya with no weirdness at all.

Actually, I keep my daiya in the freezer in a ziploc bag and just take out what I need. It lasts much longer this way because I don't feel the need to use a whole bag in a week.

I do this too. Nothing is more devastating that opening up a bag of delicious Daiya to find out that it has grown some mold. Freezing eliminates that and doesnt affect the flavor or consistency in any way.

And It freezes in crumbles, not in a hard chunk, so you can take the frozen Daiya straight from the freezer and add it to your dish, no thawing necessary (assuming your dish will be cooked, of course).
