yes! neither of the vegan brunch quiches call for nooch or silken tofu.

i don't even think omitting the mustard entirely would be a big deal.

My favorite is the carmelized onion quiche from Vegan Brunch. It takes forever to carmelize the onions (it took me a LOT longer than it said in the recipe) but it is totally worth it. Not many incredients in that one either!
