Yeah beans on toast is atlantic canadian staple. Tomatoe sauce beans or the maple ones. I personally prefer tomato/savoury on toast and a small side of maple beans with roasts/seitan or to balance other savoury dishes.

Cook beans and corn with taco sauce and oregano until hot. Heat burritos as directed on package. Wrap beans/corn in burrito with sliced avocado. [I'll add some canned asparagus or frozen okra sometimes during the bean/corn cooking.] Geez...I'm such a dweeb (though apparently I'm the only one who noticed). This is to make a burrito, I wrap the ingredients in a fajita. Also, I usually just do beans, salsa, and a bit of oregano (no corn). This was the "fancy" version;) I believe the word you're looking for is tortilla. :) HA!

Rice and beans with a ton of hot sauce and/or spice. Or beans on toast with hummus. Anything with beans really!

Vcon black bean burgers (I have a stash frozen) chopped up over a simple salad with Godess dressing. Garlic naan from my coop on the side!

Take packet of ramen (the kind you eat dry with a paste sauce, mine is a sweetish chili base). Boil water in electric kettle. Pour over ramen. Let sit a few minutes, dump out water and mix in paste sauce. Add giant handful of nooch. Shovel into mouth.

My problem, though, is that if I have food, I'll eat it. I need to learn to pace myself. Remember Jughead from a few years ago? He always had that problem, so he immediately portioned out what he cooked and stuck it in the fridge or freezer. I know I'm less likely to eat something if I've already stashed away what's supposed to be tomorrow's lunch.

yesterday i made roasted garlic and broccoli puree and pasta. it's a simple and REALLY great dish:
-heat up a few tbs of oil in a pot -cut up about 7-8 garlic bulbs, and chop a bit -roast garlic in oil -while garlic is roasting, cut up 1 head of broccoli and when garlic smells nice and roasted, add broccoli. -add broth - just enough to almost cover -let simmer for 20-25 mins (until broccoli is falling apart and have become a almost puree like consistency. -mix with cooked pasta and enjoy.
this makes about 3 huge servings.. so i usually have it two days in a row.
later today i will be starting my tofu scramble challenge: i will be making a new tofu scramble every day for a week. i need to up my protein, and i became pretty inspired by the tofu scramble thread.

Today I ate a Clif bar and a plate of green beans for dinner. This is less out of being a bachelorette and more out of poverty.

Toast with hummus and rocket.
Then a chickpea and spinach burger on top of the rest of the rocket because I was too lazy to make more than one slice of toast.

Pasta with caramelized onions and sun dried tomatoes and capers and maybe goddess dressing since I don't have any sauces. I'm actually pretty excited.
