Lentil soup...from a can. Copious amounts of saltines.

I am actually cooking pinto beans (in the crock pot) for the rest of the week. My landlord raised my rent 75 bucks and that means I officially have $20 a week for groceries from now until he makes the improvements to my apartment in order for me to get a roommate. /off topic

Tonight's meal: leftover tempeh club sandwich (from Sugar Plum Vegan) and a Goddess-dressed side salad. I then attacked a jar of Biscoff spread with a spoon for dessert.

Normally rent changes are negotiated before a new contract is signed or during the renewal phase.

This thread inspired a mofo post. Filled with satire and loneliness, I bring you Bachelorette Meals Part 1.

That was my breakfast of champions this fine morn'. Added a side of strawberries because I'm so healthy.

I did sign a new lease. And we did talk about it before I signed. He sort of has me in a bind, I didn't have the money to pay a deposit + pet deposit + first month's rent on a different apartment, so I had to agree to his raising the rent.

And, really, his rent isn't so outrageous compared to what I'd be paying in another apartment, since he pays for the heat, an all important factor living in Denver. I calculated the cost of what I'd have been paying in an apartment on Capitol Hill, and actually, it would have come out the same as just staying here. Plus, I have a 3 bedroom apartment, so if he DOES end up making the improvements (nothing big, just new carpet, which...I guess is a pretty big deal), then I can split the costs of the rent with a roommate.

Well, someone else roasted the chiles. And the corn was frozen from a bag. But still! Any meal with a side dish counts as fancy-pants in my book.

Tonight: Took a bag of pita chips, smashed with fist, dumped into hummus, applied spoon. Oh yeah.

I just ate roasted brussels sprouts and peanut butter cups. The vegetables cancel out the chocolate, right?

3 courses of things dipped in other things - carrots into tasty bite, dried apples into sunflower seed butter, broccoli into curry dip. In that order. It was magic!

Dinner tonight was a winner: a Clif bar, and DIY microwave popcorn topped with Smart Balance Light and copious amounts of salt.
