Lentil soup...from a can. Copious amounts of saltines.

I am actually cooking pinto beans (in the crock pot) for the rest of the week. My landlord raised my rent 75 bucks and that means I officially have $20 a week for groceries from now until he makes the improvements to my apartment in order for me to get a roommate. /off topic

Tonight's meal: leftover tempeh club sandwich (from Sugar Plum Vegan) and a Goddess-dressed side salad. I then attacked a jar of Biscoff spread with a spoon for dessert.

I did sign a new lease. And we did talk about it before I signed. He sort of has me in a bind, I didn't have the money to pay a deposit + pet deposit + first month's rent on a different apartment, so I had to agree to his raising the rent.

And, really, his rent isn't so outrageous compared to what I'd be paying in another apartment, since he pays for the heat, an all important factor living in Denver. I calculated the cost of what I'd have been paying in an apartment on Capitol Hill, and actually, it would have come out the same as just staying here. Plus, I have a 3 bedroom apartment, so if he DOES end up making the improvements (nothing big, just new carpet, which...I guess is a pretty big deal), then I can split the costs of the rent with a roommate.

Potato salad

Cut up as many potatoes as you think you'll want to stuff your face with, then boil until tender
Mix veganaise w yellow mustard and pickle relish, salt and pepper
Cover potatoes with mayo mixture
Eat with a spoon
