On nights when my husband is working late, I like making spaghetti & meatballs entirely in the microwave. First, I cook the dry pasta in my Pampered Chef microwave rice-cooker, then I drain it, add sauce and frozen Trader Joe's meatless meatballs, microwave again for 2-3 minutes until it's all hot, stirring once in the middle. Yummy and only dirties one pot! :)

My quick and easy go-to meal these days is noodles, some kind of vegetable, possibly a little tofu or cahews with soy sauce, garlic and sriracha!

I made this last night while Brian was at school, originally I was just going to have pasta with jarred sauce, but I kept throwing stuff into it.
Pasta Whatever Pasta Sauce You Have Vegan Mayo/Sour Cream/Cream Cheese that you need to use up because you buy it for one thing and then it just sits there Uptons Italian Style Seitan (or whatever meaty thing you have ready to go, but this makes it extra delicious) A few spoonfuls of capers Pre-washed baby spinach
Cook the pasta, then toss it in your colander. Add the sauce and your non-dairy creamy stuff to the same pot and stir it up, then add your seitan and capers. Get that shiitake warmed up. Toss in the spinaches and stir it around for a minute until it's a little wilted, then put the pasta in before it completely fuses into a colander shaped blob.
Eat out of the pot while watching Teen Mom 2, bonus points if you have a horde of hungry dogs staring at you.

ahh, liquor store nachos, I have been there
actually one time stuck somewhere shitty in Vegas I had to eat at TGIFs and ordered the nachos sans cheese/sour cream/meat...they neglected to tell me they were out of salsa and guac so a plate arrived with maybe 20 black beans on it and a ton of pickled jalapenos and the croissant of a waiter didnt understand why I was unhappy. I cant remember if I just walked away w/o paying or just left a 1 cent tip, but it blew asparagus either way...worst nacho experience ever

I figured out how to make them a bit more edible. Become disgusted with your failed nachos, sit them down some place, forget about them for an hour or two. Since you still haven't eaten anything else, pick at a nacho, realize that it's soggy but has more flavor, eat it and call it "marinated", pray you don't die from bacteria.
My friend wanted to go to TGIF's for her birthday one year. When we got there they told me they have a veggie burger but that it wasn't vegan. I thought, "Cool, I can eat expensive ketchup for dinner!" Fortunately-ish, I got a plate of plain fries. Glad I wasn't paying that night.

I had nachos for dinner and they were good. I melted thin slices of Daiya cheddar on mini tortilla chips, and covered them with refried beans and salsa.

For some weird reason I've been craving comfort foods that I never really liked in the first place. I just had a Daiya grilled cheese with potato chips. For breakfast.

Chickpea cutlet made into a burger with tomato, dijon, onion, jalepenos, ketchup. Sauteed asparagus and strawberries. So so so good.

Adam, your bachelor meals sound awesome!
Posting on behalf of my boyfriend, every single time I'm away he makes one of the following. a. Fried tempeh with garlic and onion over steamed potatoes and drenched in a jarred Patak's sauce b. Fried garlic and jarred marinara over spaghetti with TVP
The former isn't so bad, but the latter is...ugh. (I hate TVP).
Me, I'll steam a bunch of greens, saute a shitton of mushrooms with garlic and chilis, lemon and some spices, and dump the whole thing on a baked potato or quinoa.
