Whhhhhaaaaaat? you guys haven't heard about dessert hummus' ?!

1 can of chickpeas drained and rinsed.
2 tablespoons of cashew butter (I just use 1 cause I eat the whole damn batch...)
1-2 Tablespoons of soya milk
1-2 teaspoons vanilla extract
2 Tablespoons of sweetener ( I use agave)

Whizz it all up in a food processor till smooth.
Stir in a handful of chocolate chips.

Ta daaaaaaa

You can also do other variations, adding in cocoa powder.. making an oatmeal raisin type one,
in which you just omit the chocolate chips and add in cinnamon and raisins instead.

The one I typed out is a recipe that is essentially from loads of blogs ive seen, except I tried to make it a smidge healthier.
check out chocolate covered katies blog :)

Ok so I did this last night with an extra tablespoon of peanut butter and a smidge of extra sugar. The food processor warmed it up a teeny bit so the chocolate chips melted when I stirred them in. ZOMFG. I'm trying really hard not to eat it all with a spoon for breakfast part two.

Mind officially blown at the idea of dessert hummus. I keep reading the recipe and can't wrap my mind around combining chickpeas with sweet stuff. Clearly it's yummier than it sounds, but I'm still not sure I want to try it.

Last night's bachelorette meal: tofu cubes pan fried with frozen carrot rounds and frozen green beans, chopped garlic and ginger, and tahini miso dressing thrown in at the very end, served over boil-in-the-bag rice. A drizzle of (bottled) lemon juice completed the dish.

I made tacos over the weekend with the new Tofurky ground beef style crumbles and refried beans. I used the leftovers to make a giant burrito for dinner tonight with avocado slices, Daiya cheddar, and shredded lettuce. The Tofurky crumbles are really good btw!

Peanut sketti:
Cook sketti. Mix several spoonfuls of hot pasta water with a heaping spoonful of peanut butter. Add a dash of hot chile oil and some soy sauce and a dash of ground ginger if you got it. Toss drained sketti in sauce.
NOM. (also very good with broccoli added)

Tonight I had a Tofurky sammich, while I was concocting an elaborate lunch for tomorrow. I made MYSTERY SAUCE. Basically, a raspberry balsamic sauce with caramelized shallots, which I reduced a little, then marinated a bunch of tofu in it, then cooked it. I just nibbled a corner of the tofu while packing up my lunch and OMFG. So happy! Cannot wait for lunch tomorrow! Screw dinner tonight.

I've been making these awesome shakes from VegWeb - pumpkin, banana, cocoa, stevia, and soymilk with a dash of pumpkin-pie spice. Sooo good.

instant brown rice topped with black beans and salsa

I spent today writing cycle menus for my food management class. I seem to have wasted all my food creativity there :(

Apple sauce, a yogurt, a sourdough roll.

I am recently re-addicted to apple sauce, thanks to Trader Joe's. Om nom nom.

I saw those at Whole Foods- I've been meaning to try them!

I made some weird little things on Friday night that were inspired by some empanadas my brother made when he got back from Chile. Calzone/pastry combo dough with vegan sausage crumbles, sweet potatoes and spinach with a bunch of spices in the middle. SO delicious. Took a little while to make, so maybe not super fast or whatever, but not my usual style of cooking when cooking for me and my roommate. Oh. and a box of those peanut butter crunch balls from envirokidz or whatever its called. Delicious.

Leftover pasta and leftover queso with chips. I feel so proud that this was a real(depressing) bachelorette meal.

Oh dear. I made a sort of chocolate icing by mixing hot chocolate powder with margerine and ate dollops of it on digestive biscuits. I couldn't finish it as I had made rather a lot and it was very rich. I then went and lay in bed for a couple of hours (couldn't keep my eyes open to read a book, though it was only about 5.30pm). Some sort of sugar crash I think, though I don't remember being hyper. Maybe I got too much sun earlier and the chocolate was a coincidence.

Had baked beans, chunks of cucumber and halved cherry tomatoes in wraps for dinner. Now I'm going to eat a whole mango on my own!

Well, chickpeas do have a nutty quality to them so I can see it working. Theoretically. It's just very difficult for me to think "hummus" without simultaneously thinking "garlic". And choclate chip and garlic does not sound like the best combo ever.

Today's dinner was leftover cauliflower pesto soup (AFR) over leftover rice plus a salad wrap.

Sobey's sells this brand of frozen onion rings that are vegan, and for a long time after I moved the one near my new house hasn't carried them, but recently started again. I just had a plate and I feel greasy and gross BUT IM STILL HUNGRY WHAT IS WRONG WITH ME.
