tonight i roasted broccoli chickpeas & garlic (a la AFR) and served over rice with sriracha. i pretty much love it.

Lately I just cannot get it together enough to have meals with more than one component. Tonight I roasted a head of cauliflower and wanted to have it with quinoa, but I was too lazy to cook quinoa, so I just ate all the cauliflower. With sauce from a jar.
So. incredibly. lazy.
I don't even know why! I really do love cooking. I'm just in a slump and it's lasting a very long time.

Just made a spicy stirfry of cabbage and potatoes and ate it with sauerkraut... So potentially fart-provoking that it's maybe the ultimate bachelorette food.

In light of the "women who have chosen not to have kids" thread I would like to apologize because I'm pretty sure I have posted on this thread about a meal I made with my partner at one time. I hope that I didn't offend anyone and was merely thinking of a bachelorette meal as something easy cobbled together out of random cupboard ingredients when a person finds themselves eating alone. I am sorry and thanks for your time. I'm still going to lurk and read about your brilliant concoctions though, if you don't mind ;)

Hah, I was thinking the same thing, though I'm unsure if I've ever actually posted in this thread or not. I'm not a bachelorette, but I love this thread because I often do have to rustle up meals all by my lonesome.

I have a brilliant new favorite dish for those days when you're just not up for cooking a fancy meal and just want something delicious NOW.
GREEN ANGEL HAIR Heat salted water in a pot. Chop up bite size pieces of broccoli. Add broccoli and angel hair pasta to pot when water is boiling. When pasta is done, drain, add some olive oil, garlic and freshly ground pepper and mix it up until broccoli is a little mushy and enjoy.
I have had this for lunch or dinner at least 6 times in the past two weeks. This and the huge pot of dhal I made a few nights ago has basically kept me alive in the past week, during my intense paper writing.
another favorite right now, when I cook a bunch of chickpeas:
In a food processor, mix chickpeas, onions, garlic, salt pepper and spices or herbs, and process until it reaches a somewhat hummus consistency (add water if needed). with a fork, mix in some flour - this can be regular AP flour, cornflour or whatever you have on hand. If you want to, add some finely chopped veggies, or some frozen corn. When it reaches a decent consistency, fry 1-2 tbs in a little oil. Flip as soon as they start to brown. If they are too dense, add a little water. If they won't hold together, add a little flour. The awesome thing about these is that they are a great in regards to proteins and they can taste like whatever you want them to. My favorites so far are: red pepper + corn + spring onions + fresh cilantro dried seaweed + sesame seeds + roasted sesame oil + soy sauce a mix of onion, diced potato and diced beetroot with a little parsley
I make a bunch when I make them, they stay good in the fridge for 3 days and they can be used as a side or a snack!

Migas are my best friend right now. I discovered these amazing jalapeno-cilantro corn tortillas and have had migas every night for about 4 days.
Also chips. Right now I'm eating Beanfield's nacho chips...best chips ever!

Vegan easy mac - small pasta (I used a "white fiber" mini penne), enough water to cover the pasta, then dump frozen edamame and broccoli on top. Cook for a few minutes, the add a few spoonfuls of bulk uncheese sauce mix (I use this recipe: http://vegweb.com/index.php?topic=7126.0) and cook for about 2 more minutes. I use the sauce on pasta a lot, but I hadn't tried cooking everything in the microwave at once. It turned out great, and the sauce was extra creamy with the starchy pasta water.

Take oatmeal. Make oatmeal. Mix in equal amount of creamed corn. Salt to taste.
I had a moment today where I wondered if this was weird, so I googled 'oatmeal creamed corn'. Apparently it makes excellent carp bait. =/

illogicalthings, i don't think creamed corn sounds all that appetizing but i really like making savory oatmeals, so i don't think it's that werid! i like making a peanut saucy thing with pb, vinegar, salt, pepper, and vegetables- i've only done it with steel cut oats though, never with rolled, and i think the steel cut oats have kind of a ricey texture anyway.
my bachelorette dinner tonight was chickpea salad with cornchips. also a side of homemade kimchi. i think i might go make myself a mug of peanut butter cookie dough type goo for dessert.

Lunch was Pitta bread, smothered in tomato puree and cheezly, and shoved in the microwave till it was all melty. My first "cheesy" pizza in...a very long time!

One pot pressure cooker meal last night -- Thai red rice, bell pepper, diced sweet potatoes, canned pineapple, tofu, red curry paste and shredded coconut all dumped in and cooked, then kale added at the end just to wilt it.

sometimes i eat so delicious vanilla ice cream + sprinkles + semi-sweet chocolate chips for dinner. other times when i'm feeling like veggies i saute broccoli + cherry tomatoes + mushrooms + minced garlic together and serve over brown rice pasta with a ridiculous amount 'o nooch.
both are pretty awesome.
