They have multiple vegan recipes in their book. Anybody try making their salted caramel? I made the chocolate and it is amazing. Best vegan ice cream I've ever eaten. But I tried the salted caramel first, and it didn't quite come together as expected. I've made caramel with heavy cream in a previous life. I sometimes overcooked the sugar, but never had any serious problems. But with this recipe, instead of added cashew cream or coconut milk to the melted sugar, they have you adding coconut oil and then cocoa butter. The oils/fats never really combine with the sugar. So while I tried in vain to whisk, the sugar sat in a layer on the bottom of the pan and burned. Any success with this one?
