 Post subject: Peanut butter fail

I can't believe I'm about to ask this, because isn't making your own peanut butter supposed to be the easiest thing in the world? But how do you get peanut butter rather than peanut flour?

We have peanuts for the birds and we wanted to make some peanut butter from it to smear into holes in logs for the woodpeckers. Every recipe online basically just says to put the peanuts in a blender or food processor and blitz away until it turns to peanut butter. I was there for a good ten minutes blitzing these peanuts, first in the food processor and then in the blender and all that happened was that I got a finer and finer powder. What am I doing wrong? Do I need to add oil? The recipes I've seen seem to treat oil as an optional ingredient, if they list it at all, and I've seen people make peanut butter on TV just using peanuts. What am I missing?

It depends on the strength of your processor. You probably do need to add a little oil in most devices, but in the U.S., Vita Mix does a great job with all nut butters, sans oil. Probably other high end
blenders work well too.

I don't have a Vitamix, but I was pretty sure my Kenwood would be up to the task. It seems that's not the case. I also wonder if it's possible for peanuts to be too old? Do they lose some of their oil content as they get old? We buy them at a seed shop, so I wouldn't be surprised if they're not as fresh as food-grade peanuts.

I find if the nuts have any moisture in them they tend not to butter up, you might try roasting them for a while first?

Huh, I never thought of that. If anything, I assumed they were maybe too dry. I'll have to try that and see if it makes a difference!

You can go all out Wolfgang Laib and spread the peanut dust over a large flat piece of marble and install it in the forest for the birds. Woodpeckers are known for their propensity toward art criticism.
