For pudding (as Ariann suggested) Just whiz it with some melted chocolate chips, or cocoa powder, agave, and a hit of vanilla (or even a package of Jell-o pudding mix). Add a splash of booze for extra deliciousness.

Cube it and use it in Miso soup.

cut it into small cubes and freeze it. use it in a stew or in a miso soup some other time.
ETA: assuming you like the texture of frozen or koya tofu. it changes and gets spongy. my kid and i could eat all the tofu in the world frozen for the rest of our lives but some people dont like it.

Soft and silken tofu are the best for tofu scrambles, quiches, and omelets!

Truth.

This is my favorite tofu based sauce: http://www.yourveganmom.com/your_vegan_ ... oking.html

It's a little ranchy and is good on everything. I use half the oil and a third of the water, and start with less soy sauce or braggs because with less fluid you may not need as much salt.

Or, how about making your own sour cream?
